He killed every living thing on earth. Since the fish could swim, and survive the flood, did they have a big ole fish fry up in Heaven?

It was the humans he was after not the animals, animals don't sin.

Was it rain that caused the great flood ?

If it was then the fish all died.

The oceans would have desalinated due to the excessive fresh water (from the rain) and killed all the ocean wildlife. Then if the oceans rose they would have salinated the inland fresh water areas thus killing all fresh water life.

Only the bull shark would have survived because it can tolerate both environments. Except it would have starved to death.

But you mustn't take religious texts too literally.
I think the salient point (no pun intended) here is that God just wanted to kill everybody. Not sure I get that bit, but it appears thats just what he likes to do sometimes.
Maybe he never read the 10 commandments.

Bear in mind that flood water becomes contaminated with all sorts of garbage, sediment, and debris like trees and rocks. I doubt if any fish lived through that catastrophic event! Tsunami survivors report that the rushing water has so much debris in it its like a blender to human beings, they get crushed and ground up like hamburger.

During the flood the salt water and the fresh water were mixed together. So does that mean that fish today that can only live in salt water or fresh water, not both, EVOLVED to their present condition?

Well if there had been a flood then obviously they would have survived. Since there was no flood it doesn't matter much.
