Well it depends on the dessert. Do as much prep before hand as you can. Multi-task and get people to help if you can. If you need 250, plan to make 300-you never know when you'll drop something or overcook it! Good Luck!

I used to do this every day when I was cooking for an upscale retirement/assisted living facility. I usually offered a few different 'special' desserts in addition to what was always on the menu. Some of the desserts that went over well were quite simple.

Cookies and cream pie - premade chocolate cookie crumb crust filled with whipped topping mixed with some cream cheese, fold in crumbled oreos. Chill several hours or overnight. It was a 1/8 cut serving, and cutting the pies was the most time consuming part. Cut them, plate them on a dessert plate with a cute doily and then garnish each piece with an half an oreo cookie.

Lemon tartlets - premade Keebler tartlet shells (they come 72 to a small case) with a 1 oz scoop of lemon pudding in each. Garnish with a tiny dollop of prepared blueberry pie filling. Place on dessert plate with cute doily and chill until serving time.

Brownies - pretty self explanatory and always popular. I'd make a few half sheets of brownies, cut into serving pieces and then sprinkle with powdered sugar. And don't forget the dessert plate and the cute doily. (See the pattern here? If it looks good, they'll at least try it.)

Then there are the ultra easy desserts such as ambrosia fruit salad and pudding that can be made in quantity and dished up and decorated rather easily. Also, individual fruit plates, nicely arranged and served with a simple fruit dip of sour cream, brown sugar and vanilla. I'd just portion the dip into individual cups (small Solo cups) the night before and cut the fruit the day of service. Put them on a dessert plate, but with a piece of leaf lettuce instead of the cute doily this time.

It's not very difficult to make that many desserts, it is just a little time consuming to present them all properly. It is also a bit overwhelming if you aren't used to doing it all the time. But you know what? It is FUN. I love making a beautiful plate and desserts are very easy to dress up. Everyone should try creating a dessert buffet or cart at least once in their lives if they like to play with food!

Depending on what you are making, some of the preparations could be done days before. If not, call in re-enforcements from friends or family. Good Luck, make one for me...lol

OK someone has to do it, I can't resist;
24 hour in a day X 60 minutes = 1440 div. by 250= 5.76 mins.
5.76 minutes apiece, almost a piece of cake, wait you're not making cake are you?
