Yes you can. I would suggest putting your meat loaf in a shallow disposable aluminum pan and set the pan on the grill in your roaster oven and let it bake. Makes a delicious meatloaf.

Yep, you sure can. I do it all the time and it turns out great every time. I use a glass baking dish inside the roaster and put a little bit of water in the bottom of the roaster (it keeps everything moist). One of the benefits of using the roaster oven is that it doesn't heat up the house like a regular oven. You can even set it outside to make more room in the kitchen if you're cooking a big meal for a lot of people.

Buy lean or extra lean ground meat. The trouble with this is that your meatloaf is often dry. I just made one yesterday with regular ground beef and altho there was a lot of grease in the pan when it was done It wasn't greasy after I lifted it out. But you won't have that problem with lean meat. But don't count on having drippings to make gravy because there very well might not be any.
