yes it certainly will. Here is a good recipe for banana nut bread:
Banana Nut Bread
* 3 ripe bananas, mashed
* 2 eggs, well beaten
* 2 cups all-purpose flour
* 3/4 cup granulated sugar
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1/2 cup chopped pecans or walnuts
In a mixing bowl, mix together the mashed bananas and beaten eggs. Sift together the flour, sugar, salt, and soda and stir into banana mixture until well blended. Stir in nuts.
Pour batter into a 9x5-inch loaf pan and bake at 350° for 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. Makes 1 loaf of banana nut bread.

It'll turn out mushy in the middle and be very crunchy and brittle on the outside.
