Does anyone know the details on the difference between bacon, pancetta, and proscuitto?

well thats tricky
PANCETTA actually IS bacon, italian bacon anyway
its dried for a few months after being salt-cured
from the belly of the hog
usually called pancetta de prma or parma ham
NOT usually smoked and usually served w/lunch or dinner

BACON (also known as rashers in the UK)
is the sides, back, and belly of a pig and can be smoked
served w/breakfast in both US and UK
(though what is considered REGULAR bacon in the UK is
slightly different)

PROCIUTTO comes from the pork shoulder and is dry-cured
it takes a considerably longer process to make than the other two
the curing time alone for traditional prosciutto is around 2 years
its usually served w/melon or fresh mozzarella as an antipasto, or on sandwiches

Pancetta is an Italian form of bacon. It is pork belly that has been salt cured and spiced, and dried for about three months (but usually not smoked). There are many varieties and each part of Italy produces its own type. In Corsica, it is considered a regional flavour.

Bacon is smoked. Pancetta is cured, but not smoked. Prosciutto is typically uncooked, dried ham. All delicious.
