2 tablespoons hot water, or milk or light cream
1/4 teaspoon vanilla, lemon, or other extracts, or 1 teaspoon lemon juice or rum

Melt chocolate in top of double boiler, add boiling water and stir until smooth; add vanilla and the sugar; stir until mixture is smooth. Or dissolve 1/3 cup cocoa in boiling water. A little cinnamon may be added.
Coffee or Mocha Icing

3 tablespoons hot strong coffee
3 tablespoons dry cocoa
1/2 teaspoon vanilla
1 1/3 cups confectioners sugar
Add coffee to cocoa, stir until smooth, add vanilla and enough sugar to reach spreading consistency
Lemon Icing

grated rind of lemon
1 tablespoon lemon juice
1 tablespoon boiling water
1 cup confectioners sugar
Add lemon rind to juice and water, stir into the sugar, a little at a time, until thick enough to spread.
Orange Icing

1 egg yolk

2 tablespoons orange juice
1 teaspoon lemon juice
grated rind of 1 orange
Add yolk to sugar, mix well; add the rest.
Fruit Juice Icing

Chocolate Fudge Icing (For Plain Cake)

Ingredients

1 c minus 1 tbsp rich milk
1 remove from heat and stir in until; dissolved
2 c sugar
1/8 ts salt
2 oz grated chocolate

Chocolate Fudge Icing

This icing recipe is a candy recipe with milk added to make it intofrosting.

Bring to a boil and cook covered 2-3 minutes until the steam washes down from the sides of the pan any crystals which may have formed.
Uncover, redice heat and cook without stirring to soft-ball stage,
238 degrees. When nearing 238, there is a fine overall bubbling
with, simultaneously, a coarser patter, as though the fine bubbled areas were being pulled down for quilting into the coarser ones.
Remove from heat without jostling or stirring. Cool the candy to
110. You may hasten this process by placing the hot pan in a larger pan of cold water until the bottom of the pan has cooled. Add: 2- 4 TBSP butter
Beat fudge partially. Add: 1 tsp vanilla
Then beat until it begins to lose its sheen. At this point the drip
from the spoon, when you flip it over, holds its shape against the bottom of the spoon. Quickly add: 1/2 1 c. broken nut meats
Pour the fudge into a buttered pan. Cut into squares before it
hardens. To use fudge for centers, beat until thick, knead and
shape.
For chocolate fudge icing use in all: 1 c. milk
Beat until the icing is of the right consistency to be spread.

This is my very favorite one, I believe it is the cinnamon that makes it so very good.

Chocolate Cream Cheese Cinnamon Frosting

You can adjust the amount of cinnamon, I found that 1/4 teaspoon was just the perfect amount, use butter only for this. This frosting freezes very well, just thaw in the fridge overnight or at room temperature.

4 cups 5 min 5 min prep

1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1 1/2 teaspoons vanilla
1/4 teaspoon cinnamon (can use more)
2 cups powdered sugar
1/4 cup unsweetened baking cocoa (sifted)
1/4 cup buttermilk

In a large bowl beat the cream cheese with butter, vanilla and cinnamon using an electric mixer until smooth and creamy (about 3 minutes).
In another bowl mix together the powdered sugar with with sifted cocoa powder; add to the creamed mixture alternating with the buttermilk on low speed until combined.
Adjust with more buttermilk if needed to achieve desired consistany.

Chocolate Cream Cheese Frosting
1 (8 oz.) package cream cheese
3 T milk
pinch salt
2 oz. unsweetened chocolate, melted and cooled slightly
2 to 3 C confectioners' sugar

Soften cream cheese cheese in milk. Add 1 C sugar, blend well. Add another 1 C sugar, blend well. Add melted chocolate and salt. Add more sugar, if necessary, to reach frosting consistency. Beat until smooth.

This makes enough to frost a 2-layer cake, a 9 X 13" sheet cake, or 24 cupcakes. If there are any left over, eat it with a spoon. I won't tell anyone you did it.

Set aside. In a saucepan, heat the oil. Dredge the beef in some flour. Add the beef to the pan, cooking every side until browned. Add the water and cook for 2-3 hours. Fill a separate saucepan with water, add the peas, and cover. Bring to a boil. Keep the meat covered with water and, when half-done, add the vegetables, cut fine, and the seasonings. Remove the meat and place in a serving platter. Rub the peas through a puree strainer and, after removing the fat from the meat liquid, add the peas to the latter. Serve hot.
