THREE CHEESE MANICOTTI

1/4 cup Chopped onion
1 Garlic clove-- minced
1 tablespoon Olive oil
1 can Tomatoes - (16 1/2 oz)
1 can Tomato sauce - (8 oz)
1 teaspoon Sugar
1 teaspoon Dried oregano -- crushed
1/4 teaspoon Dried thyme -- crushed
1 small Bay leaf
8 Manicotti
2 Eggs -- beaten
2 cups Shredded mozzarella cheese
1 1/2 cups Ricotta cheese
1/2 cup Grated parmesan cheese
1/4 cup Snipped fresh parsley
1/2 teaspoon Dried oregano -- crushed
1 dash Pepper


For the sauce, in a 2-quart saucepan, cook onion and garlic in hot oil until tender but not brown. Add undrained tomatoes, tomato sauce, sugar, the teaspoon oregano, the thyme, and the bay leaf. Bring to boiling; reduce heat. Simmer, uncovered, for 20 to 25 minutes, or until thickened. Remove from heat; discard bay leaf. Meanwhile, cook manicotti according to package directions; drain. Rinse shells in cold water.
For filling, in a medium mixing bowl stir together eggs, half the mozarella cheese, ricotta cheese, parmesan cheese, parsley, the 1/2 teaspoon oregano, and dash pepper. Spoon filling into manicotti.

Pour half the tomato mixture into a 2-quart rectangular baking dish. Arrange stuffed manicotti in the baking dish. Pour remaining sauce over shells. Sprinkle remaining mozarella cheese atop. If desired, cover and chill manicotti for up to 24 hours.

To serve, bake the stuffed manicotti, covered, in a 350 degree oven for 35 to 40 minutes, or until heated through.

Comments: To add a little more zip to sauce Harley added a pinch of fresh crushed fennel seed into the sauce while it was simmering. Also, you may want to increase the amount of shredded mozarella by a cup

1 package ricotta cheese
16oz bag italian blend cheese
1 16 oz can tomato sauce
1 8 oz can tomato sauce
1 16 oz can diced tomatoes
1 8oz can mushrooms
1 ib hamburger meat
italian spices-oregano, garlic, italian seasonings
1 package manacotti noodles

cook ground beef

mix tomato sauce, tomatoes, mushrooms, spices and meat in a saucepan, heat on low-med

cook noodles to aldentae'
mix ricotta cheese and shredded cheese
fill in ziplock bag cut hole in corner
squeeze out into noodles
place in pan pour sauce over and cook at 350 for 25 minutes

My Mom has made it this way for years. She starts by making her own spaghetti sauce, so choose your favorite.
Spaghetti sauce
1 large ricotta
1 lb mozzarella
1 egg
garlic powder
manicotti noodles (cook until not yet soft)

Mix together cheeses, garlic powder, and egg. Stuff pasta shells.
Put sauce in bottom of pan then lay noodles in pan then more sauce. Use plenty of sauce. Cook covered 400 at 30-45 min.

Crab Manicotti Alfredo

1 med. onion - diced
1 c. celery - diced
1 Tbsp. garlic - minced
8 oz. cream cheese - softened
1 lb. crab meat - diced
pepper to taste
season salt to taste
1 can clams (6 oz.) with juice
6 oz. Parmesan cheese - grated
8 oz. pkg. manicotti shells
2 pkg. alfredo sauce mix

Bring kettle of water to a boil and add manicotti shells, boil for 5 minutes, and remove from heat and place in ice cold water immediately to stop the cooking process. In a large skillet saute onion, celery, garlic, then add crab meat, clams with juice, and season to taste. Then add softened cream cheese, then the Parmesan cheese. Stuff cooled shells with the mixtures and place in a 9x13 glass pan sprayed with olive oil or Pam.Mix the pkg. Alfredo sauce mix per package and pour over manicotti. Cover and bake for 30 minutes till heated thru.


Spinach Manicotti


1 carton (15-ounce) ricotta cheese
1 pkg (10-ounce) frozen chopped
spinach, thawed and squeezed dry
1 1/2 cups (6-ounces) shredded mozzarella cheese, divided
3/4 cup shredded parmesan cheese, divided
1 egg
2 tsp minced fresh parsley
1/2 tsp onion powder
1/2 tsp ground pepper
1/8 tsp garlic powder
2 jars (28-ounce each) spaghetti sauce with meat
1 1/2 cups water
1 pkg (8-ounce) manicotti shells


In a large bowl, combine the ricotta,
spinach, 1 cup mozzarella, 1/4 cup
parmesan, egg, parsley, onion powder,
pepper, and garlic powder.
Combine the spaghetti sauce and water.
Spread 1 cup sauce in an ungreased 13-inch
by 9-inch baking dish.
Stuff uncooked manicotti with the spinach
mixture and arrange over sauce.
Pour remaining sauce over manicotti.
Sprinkle with remaining mozzarella and parmesan.
Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before
baking.
Bake uncovered at 350 degrees F for 40-50 minutes
or until heated through.

Yield: 6-8 servings.

buy the shells boil them and do the same as u would ziti and lasagna mix pasta in pour jar of tomato sauce ricotta garlic seasoning spinach if u want some mozzerella and alittle sauce in a pan add pasta mixture and cheese on top and if u want add beef to the cheese and pasta mixture put in oven good with garlic bread and grilled sausage

i use the tube shells
and just mix ricotta and parma cheese
then if i use beef i spice it up with italian seasoning and then i pipe in the shells..You are gonna wanna cook the shells and dry them well.
If i want a veggie kind i use parma and ricotta and spinich draned and thawed...then i use my best homemade tomatoe sauce and us a 10x13 in pan put sauce at the bottom and put filled shells in the pan cover with sauce and mozzerella cheese..350 until the cheese melts
