Adding any one of these ingredients reduces the spiciness, add plain yogurt, add tomatoes, or add little pieces of dough made out from wheat flour and plain water.

Out of these, the plain yogurt is your best option because yogurt is the most effective. Tomatoes minimize the change in flavor but the need to be added in greater amounts. Plain yogurt will calm it down like nothing else even in very small amounts.

So things like these are ideal if you accidentally add in too much pepper (like crushed red pepper). You can instantly correct your mistake. These things work even if the food is already cooked. If you are sitting down to eat Aunt Tilly's three alarm chili and it turns out that your stomach can't handle it but you can't say no to Aunt Tilly, then get some plain yogurt (maybe a spoonful) mix it in the chili in the bowl or just keep it seperate and take a little with every spoon every once in a while.

If you are just trying to figure out how to reduce the spiciness of chilies before they are thrown into the cooking pot, then two rules, the smaller the length of the chili, the spicier it will be, and also the seeds are spiciest part of the chili.

So if you want to make chili less effective, use larger size chilies (like bell peppers are not spicy at all). If you want to use a particular kind but reduce their spiciness, then simply take out all the seeds and throw them away.

I would suggest adding more tomatoes and a little bit of sugar. You have to be careful adding the sugar. You could end up making it too sweet. You could also add less spice mix to the chili. It sounds like you have some experimenting to do. Have fun and happy cooking!
