I wan't to sweep this girl off her feet, or at least keep her on her toes with me by being unpredictable and quirky.
So, what is a fun, unique place to take her or activity to do on a date? Can't be the mundane options of movie, restaurant, bar, club.

Go hiking at night in a dark forest. Bring some sausage and attract a bear. When the bear attacks, you both will probably be swept off you feet.
Don't be too unique. It makes it hard to follow later on when you've been together for a while, save it for later.
I've taken a girl to have a picnic on the beach, at sunset.
I've actually taken a girl to a dark forest but scouted out a clearing with a view beforehand. (No bears)
I've filled a room with hundreds of roses and covered the bed in pedals and 150 candles and had had such a night of crazed sex and almost burned my house down.

A nice place u could take her is roller skating at a skating rink. its fun cause of the music they play. and then it could be romantic since theres a part of the time that ur there for u to skater couples. plus who do u see now a days taking a gurl to a skating rink. i suggest though that u take ur own skates cause the rentals go up to ur calf and since ur sweating they stink. so justa heads up in case if u choose this date.

Rock climbing as long as you won't be showed up by her. Or take her to a shooting range just give her the smaller guns though or she wont like it. Warning! A girl is naturally a better shot than a guy who has never shot .

Sky diving.....I did a tandem jump for my birthday last year, it was awesome!
