Alaskan King Crab Legs

Ingredients
6 pounds crab legs, frozen Alaskan King, 16 legs
2 sticks butter, unsalted
1 clove garlic, peeled, crushed
salt, kosher
1 medium lemon, squeezed
We begin by pre-heating the oven to 400 degrees. In a small pot we melt the butter with the garlic and a pinch of salt over low heat. We then add the lemon juice and keep the pot on very low heat.

We put the frozen crab legs exposed crabmeat up into two 9 by 13 inch pans and brush them all over with the melted butter-lemon juice mix. We put the pan carefully in the oven, the legs are BIG, and bake for about 30 minutes brushing the exposed crabmeat a couple of times with the butter mixture. We want the crab legs to be heated through. We do not use all of the butter, we have about 4 or 5 tablespoons of butter remaining which we divide among small prep bowls. We serve the legs with the butter for dipping.

Usually, cooking the entire crab and boiling it is the best way to cook the crab legs. If you just buy the crab legs, boiling them in hot water along with the spices of your choice or some broth would also be a delicacy.

King Crab with Lemon Grass-Ginger Butter and Roasted Potatoes:

1 3/4 pounds red thin-skinned potatoes (each 2 to 2 1/2 in. wide)
Lemon grass-ginger butter (see notes)
2 tablespoons grated parmesan cheese
2 tablespoons minced shallot or onion
1 tablespoon minced parsley
1 teaspoon minced garlic
5 pounds thawed frozen cooked Alaska king crab legs, cracked (see notes)
1 tablespoon minced fresh basil leaves or 1 teaspoon dried basil

1. Scrub potatoes; cut each in half across widest dimension and brush cut sides with lemon grass-ginger butter, about 1 tablespoon total. Set potatoes cut side up in a shallow 3-quart casserole (about 9 by 13 in.).

2. Bake in a 400° regular or convection oven for 20 minutes. Turn potatoes cut side down and bake until well browned and tender when pierced, 20 to 30 minutes longer.

3. Meanwhile, in a small bowl, mix parmesan cheese, shallot, parsley, and garlic. When potatoes are done, sprinkle mixture evenly over them. Cover and keep warm.

4. Arrange crab legs in a single layer in an 11- by 17-inch pan. Brush with lemon grass-ginger butter, using about 2 tablespoons total. Broil 4 to 6 inches from heat until meat is hot in center of thickest part of leg (cut where cracked to test), 8 to 10 minutes.

5. Transfer crab legs to a platter, arrange potatoes around them, and sprinkle with the minced fresh basil. Serve with the remaining lemon grass-ginger butter to add to taste.

Yield: Makes 5 or 6 servings

Yes, but why are you doing either? In this country, crab legs are precooked and then frozen, and the best preparation methods are baking, broiling, or — surprise — microwaving.

James Peterson, author of Fish & Shellfish (Canada, UK) cautions against buying thawed crab legs, because they begin to lose their freshness once thawed. For this reason, he likes thawing them and heating them in one step in the microwave oven (wrapped in a damp paper towel for four minutes or so, although the timing will vary depending on the number of legs you have). Otherwise, thaw the legs in the refrigerator for 8 hours or more.
If they have been split, they are best broiled for about three minutes, after being brushed with butter or olive oil. If the legs are whole, they are best baked in the oven at 350°F (175°C) for eight or nine minutes.

One of our readers, who has definite opinions on the subject, says salting is unnecessary because the crab is cooked and cooled to subfreezing in brine before being glazed with fresh water. He suggests thawing and rinsing the crab in quantities of fresh water before cooking, lest you find the meat too salty
