I actually prefer it over flour. It makes the fried food really crispy. Just make sure that the oil in the pan is good and hot.
To pan fry a boneless chicken breast, simply put a generous amount of olive oil in the pan say a couple of inches deep (I like iron pans the best) and heat until oil is good and hot. Dredge chicken in cornstarch and shake off excess. (If you wish, you could add some dried spices and salt to the cornstarch before you add the chicken) Drop chicken pieces into oil, carefully and cook, turning once for about 15-20 minutes for boneless chicken, and about 45 minutes for bone in chicken. Remove to paper towel and let drain and sprinkle with seasoning salt while still hot-delicious!

Yes you can, you can also make a batter from cornstarch using hmmm its been awhile I think its cornstarch, one egg and some milk. Also to fry chicken breast if your not using the batter, put a little oil in a pan and fry! Not enough to cover the whole breast just to brown one side at a time.

Yes indeed! Most chinese restaurants use cornstarch instead of flour.
Fry a breast skin side down about 7-8 minutes, then turn over for another 7-8 minutes. Pierced w/ a knife or fork, juices should run clear

A low proportion of cornstarch will increase the "fines" in the batter, never 50/50. Seasoning the batter is good, but there is a solid difference between working wet and dry, which is the real edge maker in fried food. For boneless chicken, I use a seasoned wet batter with about 15% cornstarch. For chicken on the bone, I reccomend the milk marinade with the dry dredge and little if no corn starch in a seasoned flour batter. You can add neat stuff to the dry batter like rosemary flavored wheat crackers etc. Corn starch burns too easily under oil for longer periods of time.

Yes, just use it as you would flour. For chicken breast, I would make it like a cutlet. Pound with the flat side of the mallet with the chicken between sheets of wax paper. Dip cutlet in cornstarch/flour, then beaten egg mixture, then seasoned dry bread crumbs. Fry til golden on each side - in oil or butter.

all the chinese food thats fried is coated with cornstarch. just mix it with alittle water to make a batter. be carefull when you fry chicken breasts, if you cook them too long they get dry

It works fine and as a bonus, prevents some of the 'doughy' taste flour can leave. As usual, just be sure to knock off as much as you can for the thinnest possible layer.
