SUPERFAST VEGETARIAN PIZZA

1 tablespoon olive oil
1 medium zucchini, diced
1 medium-size yellow crookneck squash, diced
1/2 tablespoon dried crushed red pepper

1 16-ounce baked cheese pizza crust (such as Boboli)
1 14-ounce jar mushroom pizza sauce
3 large garlic cloves, minced
1 cup packed shredded mozzarella cheese (about 4 ounces)
1/2 cup drained oil-packed sun-dried tomatoes, thinly sliced
1/3 cup grated Parmesan cheese




Preheat oven to 450°F. Heat oil in heavy medium skillet over medium heat. Add zucchini, yellow squash and crushed red pepper; sauté until vegetables are almost tender, about 5 minutes.
Place pizza crust on baking sheet. Spread mushroom sauce over. Sprinkle with garlic, then mozzarella. Top with squash mixture and tomatoes. Sprinkle with Parmesan cheese. Bake pizza until cheese melts and crust is crisp, about 13 minutes. Cut into pieces.

Makes 8 pieces.

If you want a real easy way to make a good thin crust pizza I like using large flour tortillas, or flat bread as the crust, brush with olive oil, sprinkle oregano or Italian spice, spread some crushed garlic, hot pepper flakes, then slices of tomatoes, fresh basil, and some grated mozzarella or sliced buffalo mozzarella. Bake in a hot oven (400o or so) about 5-8 min (keep an eye on it). toppings can be adjusted. If you've got a regular pizza dough crust, spread with a generic garlic/herb cheese spread, minced garlic, 2-3 caramelized onions, pieces of prosciutto (cooked bacon will do) and provolone and mozzarella cheese. My favorite twist to this is to add chopped clams.

BBQ Chicken Pizza:

We love the contrast of flavors provided by sweet tomato chutney, savory chicken, and sharp cheddar cheese.

1 (10-ounce) Italian cheese-flavored thin pizza crust (such as Boboli)
3/4 cup tomato chutney
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
2/3 cup diced plum tomato
3/4 cup (3 ounces) shredded extra-sharp white cheddar cheese
1/3 cup chopped green onions

Preheat oven to 450°.

Place crust on a baking sheet. Bake at 450° for 3 minutes. Remove from oven; spread chutney over crust, leaving a 1/2-inch border.

Top chutney with chicken. Sprinkle diced tomato, cheese, and green onions evenly over chicken. Bake at 450° for 9 minutes or until cheese melts. Cut pizza into 6 wedges.

Note: If you can't find tomato chutney, make your own. Combine 2 cups diced plum tomato, 3 tablespoons brown sugar, 3 tablespoons cider vinegar, 1/8 teaspoon Jamaicañ jerk seasoning, and 1 minced garlic clove in a small saucepan; bring to a boil. Reduce heat to medium; cook 20 minutes or untril thickened.

Yield: 6 servings (serving size: 1 wedge)

"Quick Pizzas" - 6 servings

2 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup chopped green pepper
1/4 cup chopped onion
1 (15 1/2 oz.) jar spaghetti sauce
6 English muffins; split and toasted
2 cups shredded mozzarella cheese
1/3 cup grated Parmesan cheese

1) In 10" skillet over medium heat, in hot oil, cook mushrooms, green pepper and onion until tender, stirring occasionally.
2) Stir in spaghetti sauce. Reduce heat to low; simmer 5 minutes. Spoon onto muffin halves; top with cheeses. Place on baking sheet.
3) Broil 4" from heat until cheese is melted and bubbly. Serve at once.

There's one that a local pizza place here makes with cooked sliced potatoes, bacon, and green onion and they use a creamy ranch sauce instead of traditional pizza sauce. They also have one using a creamy alfredo sauce with pepperoni and bacon. I've also heard of using a barbeque sauce in place of the traditional tomato. Something magical just happens when you take a crust, cover it with sauce, and melt cheese over it, no matter what toppings you use. YUM!

I know this isn't a recipe but the chef boy r d (however that is meant to be spelled???) kit makes a great pizza. Epicurious.com is the place to go for recipes.

I really love the buffalo chicken pizza. I really dont like any of the other different ones they are coming out with, just that one. That is, if you like spicy food. Also, vegetable is a good one too.

Use the dressing like the tomato sauce, put on the crab meat and cheese, bake at 300 until the cheese is melted, add lettuce and tomato.

Pick up an already made pizza crust, a jar of alfredo sauce, shredded mozorella, pre-cooked pre-cut chicken breast, black olives, mushroom, and fresh spinach. Its soooo tasty!
