"Watershed moments" Are they something like milestones?

Not in the slightest.

In geography, the "watershed" is the line that separates the rainwater catchment areas of two rivers or oceans. Somewhere all the way along the Rockies there is a ghostly line such that a raindrop falling on one side of it will end up in the Atlantic or the Gulf of Mexico, and on the other side it will end up in the Pacific.

So a "watershed moment" in life is one where you choose between two completely different futures and there is no going back from it.

A watershed is the foundation of an ecological system that supports plant & animal life. A watershed moment would be an event or point in time where the foundation of something is established or radically changed. It could be something that changes your life, it could be something that changes a community, or society at large. Lincoln signing the Emancipation Proclamation could be considered a "watershed" moment, for example.

A watershed or watershed event is any moment or event separating two distinct periods of time.

Just a guess here, but i would imagine they are moments that are not suitable for younger persons eyes/ears.

Watershed being 21:00 for UK Television (20:00 for UK Satalite) where more adult material such as swearing, excessive violence and swearing etc must not be shown before this time.

So lets say a group of lads are out for a few drinks at 18:30 and some girl flashes them, one might say "hey, that's a watershed moment"

Hope this helps, but as i said, it's just an edecated guess.
