Well I'm impressed that you're reading about it... But it depends on what you mean by 'assumptions'. Science is incremental - it builds on previous knowledge. So, for example, the age of the Earth isn't an assumption - it is known from the Science of Geology. My feeling is that you need to pick up a few text-books on Geology, Biology etc. I don't know of any online Geology texts but there's a very basic Biology one here:
Other than that, I suggest ask questions about specific 'assumptions' and people might be able to tell you if they really are assumptions, or if they are known from some other branch of Science.

On the Origin of Species by Means of Natural Selection by Charles Darwin is still the definitive work. Desmond Morris' book The Naked Ape is also quite cool.
Evolution is more than 'survival of the fittest'. Sometimes, a species has a 'freak' mutation that makes it more suited to it's environment, or more attractive to the opposite sex, thereby enabling it to hold dominant status.
However, although the theory of evolution is the accepted norm within the scientific community, it is incomplete. The science of Biological Anthropology does much to support evolution, but one of the key elements, the so-called "missing link" continues to elude modern scientists.

The book The Selfish Gene by Richard Dawkins is a interesting book and I thought written well and easy to follow. Also A brief History of Nearly everything by Bill Bryson has sections about Evolution!

Just read Darwin: Origin of the Species. A theory cannot be proven or disproven, so you can't say "how do you know for sure?" because there is no answer. it's not exactly a bunch of random assumptions, it's more like assumptions substantiated by historical facts.

the large part of evolution occurred before human beings existed, so theres no way of knowing what the truth is. There is however a lot of evidence... but no conclusive proofs. If you're in london UK check out the natural history museum, you should find all your answers there.

Why don't you consider the avian flu, for example? People are afraid it will EVOLVE to the point where humans can catch it from humans. Or bacteria that once was killed by penicillin that has EVOLVED to where the drug no longer affects it? Or insects that once were killed by certain poisons that have EVOLVED to now require different poisons?
Evolution does not take anything away from God. How did we get into this conversation?

ALL human thought is based on assumptions. You cannot escape that.
Some assumptions are better evidenced though, such as the ones on which science is based. The assumptions that religion is based on are not evidenced at all.

Evolution is just a spin on the Hindu belief of reincarnation. You start out as the lowest living organism and, over time, having gone through all of the various life forms (like climbing a ladder) you "evolve" into human form.
