As both the previous answers have noted, Le Pied de Cochon is famous for its onion soup.

Its certainly good but, in truth, nothing special. and fact is that its overpriced and the enitre place has become a tourist joint.

Try the Cafe Conti at 1 rue de Buci in the 6th. A very friendly place with moderate prices and good food, including good onion soup.

The area around Les Halles... any restaurant there will have a fantastic onion soup.
Le Pied de Cochon is quite famous, but even the lesser known places have great food!

Not sure it's the best, but Le Pied de Cochon is a wonderful restaurant in a quiet corner of the Halles and is open 24/7... a miracle. They also have great shellfish.
