It's probably the ungodly amount of butter they use to make them.

Imitation crab is no good.
Real crab meat makes a great crab cake. Also you shouldn't use to much breadcrumbs. It soaks up all the moister. If you live near a Wegmans, they make really good crab cakes.
Good luck.

You have not HONESTLY eaten Crab Cakes. They do not contain imitation crab. You have eaten White Fish Cakes or Cod Cakes.
Crab Cakes
3 cups fresh crab meat (I don't use canned)
3 green onions thinly sliced
2 eggs beaten
1 tablespoon Worcestershire Sause
1 tablespoon Hot Sauce
1 tablespoon Cajun Seasoning
4 Tablespoon Mayo
1/2 cup finely fresh bread crumbs (plus extra for coating)
olive oil for cooking.
This receipe makes around 30. But I double it to make my cakes fatter.

You are what you eat.
Now think about what a crab eats.
I believe that the term is "Bottom Feeder."
