To be a dietitian you need to complete a bachelors degree in nutrition and do an internship. It would be best for a dietitian to become a Registered Dietitian. To be a nutritionist, you need education in nutrition either a bachelors degree or higher in nutrition, or in a related field. Since anyone can use the term "Nutritionist" it is best to become a Licensed Nutritionist, a Certified Nutrition Specialist, or a Certified Clinical Nutritionist. All of these titles require college degrees.
Pay varies greatly depending on your amount of education. A nutritionist with a masters degree or doctorate makes much more than a nutritionist or dietitian with a bachelors degree. Nutritionist and dietitians can work in clinical setting with patients, or go into nutrition research, or public health. Food companies also hire dietitians and nutritionists.
I am a dietary manager and I work directly under the dietician in our hospital/nursing home. I run the business part of the kitchen and she takes care of out patients and the nursing home residents helping them to overcome nutritional problems which may help with other medical problems they have. She sees a lot of diabetics and helps with all geriatric concerns.

To devise eating plans that suit the individual so they get the right nutrients for their health. This does not necessarily mean weight loss diets or low fat diets, although it can include them.
I used to have to devise diets when i studied home economics, for the eldery etc need more calcium and food that is easy to digest etc. Vegans and vegetarians need to find ways to get iron in their diets that you would otherwise get in meat etc. This sort of thing.
