So it makes you thirsty and you have to buy a drink as well, thus spending more money in their shops?

Flour can be dusted on top of bread for several reasons. One is simply esthetic- it looks like a rustic loaf that you could pretend came out of grannies oven instead of off the bakery shelf. It gives artesian bakeries an excuse to charge higher prices for their bread. Secondly, you can dust flour over the top of a very loose or soft dough to dry it out and help form a crust, very helpful to make a proper ciabatta with all those great holes. Of course, you can use a dusting of flour to help keep rolls separated during baking, so you can more easily separate them once baked. If you don't care for the floury coating, it can be brushed off fairly easily before you cut or eat it, or you can coat it over with a bit of butter to secure it in place. Up to you, really. I started baking when I was young and living at home. My father would not eat bread from the shops, unless my mother was really ill. We baked once or twice a week at least, all the bread and such that was eaten. I must admit, I came to prefer the homemade over the shop made, although the artesian bakeries are making great improvements. I took a baking and pastry course while I was at college to learn more and perfect my baking, which is where I learned the trick of dusting with flour and when to do it. I also admit, I am prefer not to have a lot of it dusting my sammies either, so ciabatta is the only thing I do dust over with plain flour. Now seeds and onion bits, well that's a different story.

They do that to keep the rolls from sticking together, and from sticking to the bottom of the pan. That's the same reason why they put corn meal on the bottom of bread, to keep it from sticking to the pan, the open hearth, or the loaf of bread next to it.

They roll them in flour before they put them into the pans, so that they will not stick to them and come out uniform.

mainly as they cook it browns and gives a light nutty flavor, protects the top of the bread and it looks good when you serve them in a restaurant, or at home for a party

They do it just to laugh at the looks on our faces when it sticks to the back of the throat and makes you choke as if you've just been sucking on a filled hoover bag.

For looks maybe. Try spreading a little butter on the hot stuff. It melts and give them a nice tast and look
