Apple Shortcake
125g(4oz)butter 1/2 cup castor sugar
1egg 1 cup self-raising flour
1 cup plain flour pinch of salt
1 tin of unsweetened pie Apple the big tin
2 tablespoons of sugar
Cream butter and sugar lightly, add egg, beat well:
mix in sifted flours and salt. Divide mixture into two.
roll each piece into a round: place one round in a base of a 20cm
(8in) greased sandwich tin,
put apple into a bowl mix in sugar
now cover the base with the apple
then place second round of dough on top, pressing well at sides,
brush with water, Sprinkle evenly with extra castor sugar .
bake in moderate oven 35 to 30 minutes

If you're not too fussy here is the easiest in the world:
1) Get some apple sauce,
2) Add stuff to it that you like in apple pie (like a few currents, a sprinkle of Cinnamon or a drop of vanilla essence) ~ OPTIONAL.
3) Put it in an appropriate dish.
4) Roll out some ready made puff pastry and cut out the right size and shape and put on top of the dish and put 2 slits in it and sprinkle with sugar.
5) follow the instructions on the packet to bake until the pastry is cooked.
It doesn't get any easier than that! I would recommend stewing some apples with sugar and a little water your self instead of using sauce for the filling as it tastes good and home made that way. Otherwise do the same: use ready made pastry and only put it on top, even I can't go wrong this way!!

I cannot give you a recipe, but I will tell you this: Several years ago a woman gave me a piece of apple pie and I told her, in total seriousness as a pie connoisseur, "This is the BEST apple pie I have ever had!!" She told that her secret was to use a mix of two-thirds apples and one-third pears. No kidding, best apple pie I ever tried!!!

You asked for EASY...
"Deep Dish Apple Pie"
1 1/2 cups sugar
1/2 cup all-purpose flour
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon salt
12 cups thinly sliced pared apples (about 10 medium)
2 tablespoons butter or margarine
Pastry for 9" One-crust Pie
Stir together sugar, flour, nutmeg, cinnamon and salt; mix with apples. Turn into ungreased square pan, 9x9x2"; dot with butter.
Heat oven to 425*. Prepare pastry as directed except-roll into 10" square. Fold pastry in half; cut slits near center. Unfold over fruit in pan; fold edges under just inside edge of pan.
Bake 1 hour or until juice begins to bubble through slits in crust. Best served warm.

can of cooked apples. use knife to cut pieces small in can. Dump apples in pie shell. A few small pieces of butter help the taste. Sprinkle with cinnanim or ground cloves if you want it a little spicer. Cover with top crust. Bake.
