When dogs that are otherwise healthy and house trained start to mess indoors, it is often a sign of some kind of anxiety. Do you make sure that you have seen him poo when you take him for the last walk of the day? He should also have an opportunity to relieve himself before you go to sleep for the night.
It sounds as if you are doing those things though and as this is new behaviour I suspect it is for psychological reasons.
Have you added a new pet to your house or has there been a change of some kind that he could be worried about?
Pooing and weeing are both a way to scent mark an area and so he may be staking his spot. Dominant dogs naturely hold back some of their toilet to mark their areas which is why dogs that are submissive will empty their bladders and poo at the start of their walk. Dominant dogs will tend to wee here and there instead.
Is your dog certain of the pecking order in your house or could there be reason for him to think that he is expected to be the boss?
Answer these questions first and then you will know why has started this behaviour?

Have you changed his food? Have you changed what time you are feeding him? Did you get a new job where you are home less than before or at a different time? Any of these things could have mixed up your dogs schedule. Start by trying to answer these questions. Then adjust your dog's walking times. Try feeding him a couple of hours earlier and walking a little later. Be sure to crate him and be sure to take him out first thing in the AM.

The question I have for you is ,when is the latest time that you walk him? It should be right before you go to bed.How late do you feed him his evening food ?That shouldn't be past 5 . This way he has a chance to empty himself before bed time.I think the advice for the crate is good when a dog has issues with house breaking. Dogs wont mess in the place that they sleep in. The crate should help with issue of your dog pooping.3 walks a day is usually not enough for a dog . 5 to 6 times a day is about the norm for letting a dog out.

3 chances to go to the toilet a day is not enough. When are you feeding him? When is his last walk of the day? Give more info if you want accurate answers.
Please please don't rub his nose in it or punish him for it in any way since this serves no purpose and will only confuse him. If a dog is dirty in the house it is the owner's fault for not allowing him time to go.
Put it this way, if someone else made the decisions about when you were allowed to 'go', and said "right, you have to go to the toilet now" and you didn't need to go just then, how would you feel? If you then had to hold on for another 8 or 10 hours until you were given permission to go again, how would you cope?
Your dog should be allowed to go out at least 5 times a day to the toilet. Feed him his main meal in the morning before midday to allow him to digest it and it to come out the other end before bed time. Walk him last thing at night just before you go to bed and again first thing as soon as you get up. Just as you go to the toilet before you go to bed and as soon as you wake up, your dog is no different in his needs.
Please don't keep him in a cage as some people have advised. This is another cruel American idea.

Defo don't rub his face in it that's just cruel, maybe try feeding him alot earlier and maybe even change his food completely if his number two's don't look like they should. Praise him loads and give him a treat when does do a poo in the garden or on a walk. Maybe he/she gets upset at being left in the kitchen we always leave the radio on for our dog to keep him company.

Maybe he is in need of a litle bit more attention. My dog sulks and turns her back on you if you tell he off and also goes and steals the cat food - so maybe it's an attention thing

Geeeesh! I'm sure that he will trust you forever if you rub his face in it.. I can't believe such ignorance! sigh
anyway, feed him his last meal at 5 pm..and walk before bedtime..Sprinkle a 1/2 teaspoon of Metamucil over his 5 pm feeding..that should help him to empty before bedtime..You might need to 'play' with the schedule to get him to go big, before bedtime.

you do not rub his nose you get **** all over then some scolding in the kitchen you hold that head firmly about 3 inches above the-mess let the stinko work up the nostrils 3 to 5 minutes hold on will be mad but he will stop

I would start by not feeding him after 5pm. And then I would crate him at night and put him near your bed so that if he fusses to go potty you can take him out. Once they start bad habits it is hard to get them to stop.
