Also there is a really ace book that is available from play.com called "the insulin resistance diet" again this book is recommended for people with Type 2 diabetes (tablet or diet controlled) and costs about 8 british pounds sterling

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. carbs turn to sugar, so you really need to avoid refined sugar and flour ! the only thing I can think of is chocolate mousse - using only good chocolate and eggs - it's always a success at home
for 4 people
110 g chocolate (try to find one which has 70% cocoa - Green and Black's is a good one)
4 eggs
4 ramekins
Put some water in a pot to boil, put the chocolate (you need to chop it or otherwise use the drops) in a bowl, and when the water boils, put the bowl on top of the pot. Make sure that the bottom of the bowl does not touch the boiling water. Let the chocolate melt. Divide yolks from whites, beat the whites with a whisker until they reach medium peak. Once the chocolate has melted, remove it from the pot and let it cool down. Then add the yolks, one by one, stirring all the time. Finally, add the whites, very gradually, stirring and making sure that the mix becomes smooth and soft. Pour the mix inside the ramekins, cover with cling film, and leave them in the fridge for at least a couple of hours. Serve the mousse inside the ramekin, on a small plate decorated with some fruit of your choice.

Buy a packet of sugar free jelly, a small tin of fruit in juice, place jelly crystals in a glass jug and add half a pint of boiling water, stir until melted, strain the fruit and add the juice to the jelly - this will give you a total liquid capacity of around three quarters of a pint. Place in fridge until half set. Place a small tin of light evaporated milk in the fridge to cool. When the jelly is ready, whisk the milk until fluffy, then whisk the jelly. Pour the milk into the whisked jelly, then whisk together. Place in serving dishes and place in the fridge to set. Decorate with fresh fruit of your choice. This is so easy, tasty, low in fat, sugar and calories. I am also insulin dependant diabetic.
