Recipe Ingredients:
1 c. (2 sticks) butter, softened
3/4 c. granulated sugar
3/4 c. brown sugar - lightly packed
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
1 tsp. vanilla
2 1/2 c. all-purpose flour
Put the butter, both sugars, salt and the baking soda in a large mixing bowl and beat with a mixer for about 3 minutes. Blend in the eggs and vanilla extract. Reduce the mixer speed and add the flour gradually.
This cookie dough is best used when chilled, so try to mix it up ahead of time to allow for a couple hours in the refrigerator. Roll out the dough and use your favorite cookie cutters.

Here is an excellent sugar cookie recipe-
2 eggs
2 c sugar
1 c butter
2 TBS vanilla
8oz sour cream
2 level tsp baking soda
2 tsp baking powder
5 c flour
Mix all together. Refrigerate overnight. Roll out 1/2 inch thick. Cut
with cookie cutters. Bake 15-20 minutes at 350.

"Made from only three ingredients, Shortbread is one of the simplest cookies you can bake... "
"Shortbread" - 24 cookies
2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup butter or margarine; cut into pieces
2 tablespoons sugar
1) Preheat oven to 325*. In medium bowl, stir together flour and confectioners' sugar. With fingers, rub butter into flour mixture until well combined. Knead until dough holds together. Form into a ball. Divide dough in half.
2) On each of 2 cookie sheets, pat half of dough to 9" round. Prick all over with fork.
3) Bake 20-25 minutes until no imprint remains when shortbread is lightly touched with finger. Sprinkle with sugar; cut each into 12 wedges while warm. Cool completely on pan on wire rack.
NUT SHORTBREAD:
Prepare as above, but add 1 cup finely chopped hickory nuts or pecans along with flour.
