Banana Bread

* 1-3/4 cups all-purpose flour
* 2 tablespoons baking powder
* 1/4 teaspoon soda
* 3/4 teaspoon salt
* 1/3 cup shortening
* 2/3 cups sugar
* 2 eggs
* 1 cup mashed, very ripe bananas

1 Sift flour, measure and re-sift 3 times with baking powder, soda, and salt. Cream shortening and sugar until light and fluffy.
2 Add eggs one at a time and beat well after each addition. Add bananas and mix. Add flour in 4 portions and beat until smooth after each portion.
3 Turn into well-greased pan (8x4x2-1/2 inches) and bake in moderate oven (350 degrees F) for 50 minutes or until bread tests done. Cool on rack before slicing.

Yield: Makes 1 loaf


SOFESOFE FA'I (BAKED RIPE BANANAS IN
COCONUT MILK)

12 ripe bananas
1 c. coconut milk
1/2 c. brown sugar

Peel bananas. Slice lengthwise in halves. Place side by side in a baking pan lined with foil. Pour coconut milk over bananas. Sprinkle brown sugar over them. Bake in preheated oven at 375 degrees for 30 minutes. Serve warm or cold.


BANANA BREAD PUDDING

1 loaf day old Italian or French bread
3 eggs
1 scant cup sugar
1 quart milk or half and half
1 1/2 tablespoons vanilla
4 large ripe bananas, mashed
1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon, divided in half
1 cup raisins
1/2 teaspoon fresh, finely grated ginger root
2 tablespoons dark rum or banana liqueur

Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds). Allow to sit at least 30 minutes. Stir in 1/2 teaspoon cinnamon and mix well.

Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour.

Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices. Mash the bananas and combine all ingredients together.

Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes).

Cool and serve with whipped cream or banana sauce below.

Optional Banana Liqueur Sauce:

1 banana sliced
1 tablespoon butter
1 tablespoon banana liquor
1 tablespoon sugar

Saute sliced banana in butter over high heat for 2 minutes, add sugar and liqueur and remove from heat. Stir well and serve over banana pudding. Top with whipped cream.


RIPE BANANA CAKE

3 c. sifted flour
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 (8 oz.) can crushed pineapple with juice
2 c. diced ripe bananas
2 c. sugar
1 1/2 c. oil
3 eggs
1 1/2 tsp. vanilla

Mix all dry ingredients, then sift them together. Add bananas, oil, pineapple with juice, vanilla, and eggs. Stir all together. Do not beat - just blend. Bake in a greased and floured tube pan at 350 degrees for 1 hour and 20 minutes. Cool on rack before removing from pan.



FAT-FREE BANANA MUFFINS

1 c. whole wheat flour
1/2 c. white flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
1/2 tsp. cinnamon
2 egg whites
1 c. ripe banana, mashed
1/3 c. skim milk
1/3 c. corn syrup

Grease 12 muffin tin cups. Combine flours, sugar, baking powder, baking soda, salt and cinnamon and stir thoroughly. In a large bowl, beat egg whites lightly with a wire whisk or fork. Stir in mashed banana, milk and corn syrup. Add flour mixture and stir until well blended. Spoon into prepared muffin cups. bake at 400 degrees for 20 to 25 minutes or until firm to the touch. Cool in pan for 5 minutes, then remove and cool on a wire rack. 1 serving = 1 starch, 1 fruit.

BANANA BREAD

3 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
4 large eggs at room temperature for 30 minutes
2 1/3 cups sugar
1 cup vegetable oil
3 cups coarsely mashed very ripe bananas (6 large)
1/4 cup crème fraîche
2 teaspoons vanilla
1 1/3 cups walnuts (4 oz), toasted and chopped
Special equipment: a standing electric mixer




Preheat oven to 350°F. Butter 2 (9- by 5- by 3-inch) metal loaf pans, then dust with flour, knocking out excess.
Sift together 3 1/4 cups flour, baking soda, cinnamon, and salt into a bowl.

Beat together eggs and sugar in bowl of electric mixer at medium-high speed until very thick and pale and mixture forms a ribbon when beater is lifted, about 10 minutes. Reduce speed to low and add oil in a slow stream, mixing, then mix in bananas, crème fraîche, and vanilla. Remove bowl from mixer and fold in flour mixture and walnuts gently but thoroughly.

Divide batter between loaf pans, spreading evenly, and bake in middle of oven until golden brown and a wooden pick or skewer comes out clean, 1 to 1 1/4 hours.

Cool loaves in pans on a rack 10 minutes, then turn out onto rack. Turn loaves right side up and cool completely.

Cooks' note:
• Banana bread keeps, wrapped well in plastic wrap, at room temperature 2 days or frozen 1 month.

Makes 2 loaves.

Banana Dacquiri:

Ingredients:
2-3 Fresh Bananas
1 oz Bacardi Rum
2 oz Creme de Banana
Soft Ice Cream
1 sprig Fresh Mint
Heavy cream

Preparation:
Place softened ice cream into a beverage blender - about 3/4 full. Fill remander of blender with peeled fresh banana. Pour rum and creme de banana into blender. Blender until thick and smooth. This should not take very long. Remember, the longer you blend the mixture, the thinner it will become.

Presentation:
Pour frozen mixture into a tall, stemmed cocktail glass. Fill to 3/4 full. Spray a line whipping cream around the outside of the glass. Pouring mixture into the center, fill remainder of glass with frozen mixture. Do Not Overfill Glass! Spray a spot of whipping cream onto the center of mixture. Garnish with slices of fresh banana placed around the rim of the glass, and a spring of mint leaf placed stem down by the rim.

2 tablespoons lemon juice
1 (12 ounce) container Cool Whip
1 (16 ounce) can crushed pineapple, drained
1/2 cup chopped maraschino cherries, well drained
1 cup chopped pecans
3 very ripe bananas, mashed


Mix in order listed.
Pour into dish and freeze overnight.
Serve frozen.

Banana Nut Bread!! Yum Yum

3 cups bisquick
2/3 cup sugar
2 eggs
1/2 cup milk
1 cup mashed ripe bananas
3/4 cup chopped nuts

Heat oven to 350. Grease and flour 9X5X3 loaf pan. Blend all ingredients for 3 1/2 mins at medium speed scraping bowl occasionally. Pour into pan. Bake 55 to 60 mins. Makes one loaf

1/2 cup brown sugar packed
1/2 cup soft butter or margarine
36 pecan halves
2 cups bisquick
2/3 cup mashed ripe banana
2 tablespoons soft butter of margerine
1/4 cup brown sugar packed

Heat oven to 450. Place 2 teaspoons brown sugar, 2 teaspoons butter and 3 pecan halves in each of 12 medium muffin cups. Place in oven to melt sugar and butter

Stir baking mix and banana to a soft dough. Gently smooth into a ball on a floured cloth covered board. Knead 5 times. Roll into rectangle, 15 X 9 inches; spread with 2 tablespoons butter and sprinkle with 1/4 cup brown sugar. Roll up, beginning at long side. Pinch edge of dough into roll to seal

Cut roll into twelve 1 1/4 inch slices. Place slices cut side down in muffin cups. Bake 10 minutes. Immediately invert pan onto serving tray or baking sheet; let pan remain a minute so butter scotch drizzles down over buns. Serve warm. Makes 12 buns.

Fried Banana
4 PCs Bananas cut into 1/2.
2 egg shake and mix with 1,5 cup tempura flour,add 2 pinches kosher salt add water if too adjust the thickness.
(Consistency of the batter is about same like mayonnaise.)
Coat the bananas with batter and deep fried until crispy and golden brown.
If you like you can serve with ice cream and whip cream.
