Always boil them in salted water,a teaspoonful. And then immediately after boiling, plunge them into cold water. Peels easily every time!

Coming clean off the shell has nothing to do with the temperature and if I tell you what it's about you might not like the truth. Anyway you did ask so, The eggs that come clean off the shell are not as fresh as those which don't. As the egg ages, it dries out a bit, the air pocket gets bigger, and the egg white gets a little more watery. The drying of the egg makes it seperate from the shell better. Fresh eggs are best for frying 'cause they don't spread since the white is thick. Old eggs are good for boiling. Very old eggs are good for nothing and are the cause of initiating egg allergies. The way you recognise a very old egg is by a yolk which breaks easily. When you crack your egg the yolk shouldn't break, if it does don't eat it, while you might escape getting sick, it could one day start an egg allergy for you that will last at least a few months or years. These days aged eggs might actually be good 'cause they give you time to find out if the bird flu is going around.

To get the off the shell from a boiled egg without any of the egg white sticking to the egg shell,let the egg completely cool first,submerged in icy water,then crack the whole shell all over the egg before beginning peeling off the shell.In that way, the shell would not stick to the egg white.Try it, i get the shell off perfectly everytime.

the secret is to let the egg cool down first before peeling the shell. Or if ur in a hurry, put the egg under the running water while peeling the shell.

It's all in your wrist....
When you crack the hard-boiled egg, you have to be careful not to overdo it. If there's a lot of cracks and especially small/tiny cracks made on the egg, it'll be very difficult to shell them. And most likely the results will be "bumpy". Same goes if there's too little cracks on the eggs.
So, what I did is that I lightly crack the egg to make some crack-line....not to little, not to much. Then, I would grab a small pail of water....and shell them in it. It'll be very easy to peel, making the egg white smooth.

First eggs should not be really fresh- at least a week old. If you bought them at the store you are probably OK.
Second, start your crack at the large end of the egg. There is a little air there and it seems to help for some reason.
Peeling them under water does seem to help sometimes.

this works I swear it does, after you boil the eggs, run under cold water, or use ice water. after they are cooled down, don't have to be totally cold, put them back in the pan you boiled them in. shake the pan so the eggs hit each other and the pan, shake them really good till the loud cracking sound is muffled. those shells will come off like nothing you have ever seen! read it in a magazine and swear it works better than anything I have ever tried, you will freak out how good that works....

After I cook them, I put in VERY cold water for 5 minutes. Then I add a LOT of ice to the water for 5-10 minutes. Run cold water over them as you peel and poof.. Perfect every time.

when the eggs are boiling have cold water handy and as soon as they are done cooking put them in the cold water and move them around to chill the shell. They will peel smooth and clean then.

and what i heard that when egg doesn't peel good it very good sign that eggs are very fresh.
