The common name for swiss chard is silverbeet. It is different to spinach because of its large leaves and thick white stem. Both of these can be cooked separately or combined in one dish. Usually steamed, the leaves can be cut from the stems if preferred. A very tasty gratin dish can be made from the stems Try this:
Ingredients:
12 silverbeet stems
1 cup cream
100g. soft blue cheese
grated nutmeg
ground black pepper
2tsps. butter
1/2 cup fresh white breadcrumbs.
Mthod:
Cut silverbeet stems into 8cm. lengths
Blanch stems for 10 mins.
Place in cold water to refresh, drain well.
Bring cream to a low boil and add cheese.
Season with salt peper and nutmeg
Add stems and coat well
Grease a gratin dish with butter and add the stem/cream mixture
Sprinkle with the breadcrumbs
Bake in oven until golden brown/bubbly.
This makes a great side-dish
There is also rainbow chard which has colourful red, yellow and light green stems. These can be sauteed with some bacon, or a little olive oil, or just steamed. Blanched, rolled and chopped and sauteed, both these types can be used as a base for frittata.

It's silverbeet. In the UK you can get different colours (yellow, red etc). Their stem is usually thick, so depending on how you're cooking them, you may have to do them separetely from the leaves. A good way is to boil them and make a frittata, as suggested above, otherwise, if you have tender leaves, you can eat them raw, as a salad (you need to slice them). Or you can stir fry them with a bit of onion, and then add them to boiled lentils or chickpeas to make a good healthy main.
