Sweet BBQ Shrimp
2 pounds LARGE shrimp, uncooked, pull the skin/tails off
1 finely chopped onion
1 cup olive oil
1 tsp sugar
1 tsp cayenne peper
1/2 tsp salt
1/2 tsp oregano
1 tsp garlic powder
1/4 cup Maple Syrup
Optionally a pound-o-bacon
In a large bowl, mix everything togather (except bacon) and then add shrimp.
Leave it in the fridge overnight (PREFERABLE) or at least for several hours.
Flip occasionally to distribute shrimp marinade. Pull out from fridge an hour
or so beforehand to let things warm/loosen up a bit.
The next day, preheat your bbq grill while skewering the shrimp.
Optionally place flat on a fine-screen mesh cookware - less work!
Wrap in bacon and grill. Be careful about flames from the dripping marinade.
Serve over rice, pasta, or as-is ... but be sure to drip some marinade on 'em!
Even without bacon, this bbq shrimp rocks!
Grilled Ham Steak
INGREDIENTS
* 1/4 cup apricot or plum preserves
* 1 tablespoon prepared mustard
* 1 teaspoon lemon juice
* 1/8 teaspoon ground cinnamon
* 1 (2 pound) 1 inch thick ham steak
DIRECTIONS
1. In a small saucepan, combine the preserves, mustard, lemon juice and cinnamon. Cook and stir over low heat for 2-3 minutes. Set glaze aside. Score edges of ham. Grill, uncovered, over medium heat for 8-10 minutes on each side, brushing with glaze during the last few minutes of grilling.
Calico Burgers
INGREDIENTS
* 1 1/2 pounds ground beef
* 1/2 cup cooked rice
* 1/4 cup chopped onion
* 1/4 cup chopped green pepper
* 1 tablespoon dried parsley flakes
* 1 teaspoon salt
* 1/4 teaspoon garlic powder
* 1 dash Dash pepper
* BARBECUE SAUCE:
* 2/3 cup water
* 1/4 cup ketchup
* 3 tablespoons chili sauce
* 1 teaspoon Worcestershire sauce
* 1/4 teaspoon dried basil
DIRECTIONS
1. In a bowl, combine the first eight ingredients; mix well. Shape into four to six oval patties. Grill over hot coals until meat reaches desired doneness, about 15-20 minutes. Combine all sauce ingredients in a saucepan; simmer for 15 minutes. Serve with burgers.
Flank Steak
INGREDIENTS
One 12-ounce jar orange marmalade
1/2 cup red wine vinegar
1 tablespoon chili powder
2 tablespoons A-1 steak sauce
1/2 cup ketchup
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
3 pounds flank steak
Salt and freshly ground pepper, to taste
DIRECTIONS
1. In a large bowl, combine all ingredients and mix 'em up well.
Set aside 1 cup of the marinade (see step #3 & #4) and add the flank steak
to the remaining marinade and coat well. Cover and refrigerate overnight.
2. Preheat your BBQ grill so it's pretty darn hot. Toss the steak on the grill
pour some of the marinade on top. After a minute to get a good sear,
flip the flank steak over and pour a bit more of the marinade on that side.
Discard any leftover marinade (since it had been on raw meat).
Turn the BBQ burner down to medium. Flip again after 4 more minutes,
and then remove after 4 additional minutes. This will be fairly rare;
add a 1-2 minutes per side for more well done.
3. While you let the flank steak sit for 5 minutes, microwave the cup
of marinade that you put aside earlier so it is good-n-hot.
4. Spread half of the marinade across the steak and cut again the grain
into thin slices. Provide the last of the marinade for those that want
a little extra on their pieces, and start chowing down! ;-)
Bayou Samburgers
INGREDIENTS
* 2 1/2 pounds extra lean ground beef
* 4 cloves roasted garlic, chopped
* 1 pinch garlic pepper
* 1 pinch lemon pepper
* 1 pinch Cajun seasoning
* 4 slices sweet onion, 1/2 inch thick
* 4 large Hawaiian sweet rolls
* 4 slices American cheese
* 4 slices smoked Edam cheese
* 4 green leaf lettuce leaves
* 3 roma (plum) tomatoes, sliced
* 8 dill pickle slices
* 1 teaspoon Creole mustard
* 1 tablespoon creamy salad dressing, e.g. Miracle Whip ™
* 1 tablespoon ketchup
DIRECTIONS
1. Preheat an outdoor grill for high heat.
2. Mix together the ground beef and roasted garlic. Form the mixture into four balls, and flatten into patties about 3/4 inch thick. Sprinkle the patties with garlic pepper, lemon salt, and Cajun seasoning.
3. Lightly oil the grilling surface. Place onions on the grill, and toast on both sides. Place beef patties on the grill, and set the onions on top of them. Grill for about 5 minutes on each side, or to desired doneness. If you're lucky (or trashy) enough to still have a coffee can of grease on your stove, brush both sides of the Hawaiian rolls, then toast them on the grill.
4. To assemble, place the patties on buns, and top with slices of American and Edam cheese, lettuce, tomato, pickles, and your choice of condiments such as ketchup, Creole mustard, and salad dressing.
Spicy Turkey Burgers
INGREDIENTS
* 2 pounds lean ground turkey
* 2 tablespoons minced garlic
* 1 teaspoon minced fresh ginger root
* 2 fresh green chile peppers, diced
* 1 medium red onion, diced
* 1/2 cup fresh cilantro, finely chopped
* 1 teaspoon salt
* 1/4 cup low sodium soy sauce
* 1 tablespoon freshly ground black pepper
* 3 tablespoons paprika
* 1 tablespoon ground dry mustard
* 1 tablespoon ground cumin
* 1 dash Worcestershire sauce
DIRECTIONS
1. Preheat the grill for high heat.
2. In a bowl, mix the ground turkey, garlic, ginger, chile peppers, red onion, cilantro, salt, soy sauce, black pepper, paprika, mustard, cumin, and Worcestershire sauce. Form the mixture into 8 burger patties.
3. Lightly oil the grill grate. Place turkey burgers on the grill, and cook 5 to 10 minutes per side, until well done.
Travis's Turkey Burgers with a Bite
INGREDIENTS
* 1 pound ground turkey
* 1 (1.1 oz) package dry mesquite flavored seasoning mix
* 1 fresh jalapeno pepper, seeded and chopped
DIRECTIONS
1. Preheat an outdoor grill for high heat and lightly oil grate.
2. In medium bowl, mix together ground turkey, dry mesquite flavored seasoning mix and jalapeno pepper. Form the mixture into 3 thin, flat patties.
3. Cook patties on the prepared grill 5 minutes per side, or to desired doneness.

my recipe for chicken
16 oz Plain yogurt
1/4 c Lime juice
2 cl Garlic, finely
Chopped or pressed
2 ts Salt
1/4 ts Turmeric
1/2 ts Coriander
1 ts Ground cumin
1 1/2 ts Ground ginger
1/8 ts Cayenne pepper
(optional)
3 Whole chicken breasts,
Split
1 lg Onion, finely chopped
1 lg Green pepper,
Finely chopped
In large bowl, combine:
Yogurt coriander Lime juice cumin Garlic ginger Salt
cayenne pepper Turmeric
Stir to mix. Add chicken pieces and toss to coat. Cover mixture and
chicken with peppers and onions. Cover. Chill overnight (or longer).
Prepare hot coals or preheat oven broiler for 10 minutes. Turn and
cook until done, approximately 15 to 20 minutes. Baste with marinade
throughout cooking.

Marinated Sizzle Steak-
1/4 c worcestershire
1/4 c red wine vinegar
1/4 c dijon mustard
2 TBS Olive Oil
1 tsp onion powder
1 tsp garlic powder
2 lb boneless sirloin or top round steak (1 1/2 " thick)
Combine all but steak in large baggie and mix well. Marinade in refrigerator @ 30 min. Grill or broil steak @8 min per side for med-rare. Let steak stand 5 min. before slicing.

Chicken Fingers on a stick-
4 boneless skinless chicken breast halves, pounded to 1/2-3/4 in thick
salt & pepper
24 (10in) bamboo skewers, soaked in water for 30 min.
3 TBS oil
2 TBS barbecue sauce
1 1/4 c bread crumbs
Cut each chicken piece lengthwise into 1/2 inch strips and sprinkle with s&p. Fold the strip slightly and weave them onto skewers. Prepare grill, close lid and heat until hot. In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of wax paper. Lightly brush the sauce mixture over the chicken strips and then roll them in bread crumbs. Grill until no longer pink inside, about 2-4 min. per side (on gas grill) Serve with the dipping sauce of your choice.

Skewered Mustard Beer Shrimp-
2 lb (@48) large fresh shrimp,peeled and deveined
1/2 tsp garlic powder
1/2 tsp ground red pepper
1/4 c spicy brown mustard
1/4 c light beer
veg cooking spray
Thread 6 shrimp on each skewer. Sprinkle evenly with garlic powder and pepper. Combine mustard and beer; stir mixture well. Coat grill rack with cooking spray and place on grill over med-high heated coals. Place skewers on rack and grill; basting with mustard mix often, 5 min on each side.

BBQ Alaskan Salmon-
1/4 cup olive oil, butter, and lemon juice
1 large clove garlic
1/4 tsp. salt, pepper, worchestershire sauce, and thyme
1/8 tsp. cayenne
6 salmon steaks
Combine all of the ingredients and mix well. Brush both sides of the steaks and grill allowing 10 minutes per inch of thickness basting again when turning.

Grilled Stuffed Jalapenos-
Take fresh jalapenos and make slit down one side. Clean out all seeds. fill with cheese and wrap with bacon. Place on hot grill 3-4 min. turn after 1st min.

You can grill veggies also.
Chop some potatoes, squash, bell peppers, onion, whatever you like, put in foil pocket with plenty of butter and season with salt and pepper and garlic powder (or any seasonings you like). You can place foil pockets in the coals or on a rack an let cook all day.
