Peach Cobbler, I know it isn't anything with vanilla, but it's super easy and it always impresses.
1/2 cup butter
1 cup white sugar
3/4 cup self rising flour
3/4 cup milk
2 cans sliced peaches
Preheat oven to 350 degrees. Place butter in 2 quart baking dish and place in oven to melt. Mix sugar and flour, stir in milk slowly until completely smooth. Take dish out of the oven and pour the mixture over the butter slowly. Carefully spoon canned peaches over mixture. Bake for 35 to 45 minutes or until golden brown.
Good Luck!

I have a really simple, yet YUMMY quick dessert idea. It's called "Lazy Mama's cake"... You lightly grease (spray-Pam) a 9X13 pan, then dump a can of cherry pie filling and a can of crushed pineapple (juices too) in the bottom of the greased pan. Mix the 2 fruits with a spoon. Dump a dry yellow cake mix on top -- spread it evenly over the fruit. Then place THIN pats of margarine on the top -- cover the entire cake with margarine. Bake in a 350 till cake turns light brown and fruit begins to bubble on the sides. It's great served warm or cold -- A SURE WINNER!!! Hope you enjoy.

Salvadorian Quezadilla
Estimated Times:
Preparation - 15 min | Cooking - 50 min | Cooling Time - 15 min cooling | Yields - 32 servings
Do not confuse this rich, cakey cheese bread with the Mexican appetizer, quesadilla. This recipe comes from the small village of Rosario de La Paz in El Salvador. Flavored with Parmesan-type cheese, "queso seco", and sprinkled with crunchy sesame seeds, it’s a delicious blend of sweet and savory. Enjoy it by itself or with a scoop of vanilla ice cream and a hot cup of coffee.
Ingredients:
3 cups granulated sugar
4 large eggs, yolks and whites separated
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk, divided
2 cups Cotija or grated parmesan cheese
3 cups all-purpose flour, sifted
1 tablespoon baking powder
1 cup (2 sticks) butter, melted
1 tablespoon sesame seeds
Directions:
PREHEAT oven to 350° F. Line 13 x 9 inch baking dish or pan with parchment paper.
MIX sugar, egg yolks and 1/2 cup evaporated milk in large mixing bowl with electric mixer on medium speed; add cheese little by little and remaining milk, scrape bowl occasionally.
ADD flour, baking powder and melted butter to sugar mixture; mix well. Beat egg whites in medium mixing bowl until stiff peaks form. Fold egg whites into batter. Pour into prepared baking dish. Sprinkle sesame seeds over batter.
BAKE for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Lift from pan; remove paper. Cut into squares.

Ok...most everyone I know loves a good cheesecake. Go to www.foodnetwork.com and type in cheesecake in the search bar at the top of the web page. There are plenty of recipes to choose from and they rate how easy or difficult it is to make.
