Here is what I would make:

Baked Potato Soup

This recipe is from another web site. It is like O'Charley's Loaded Potato Soup. In fact, I perfer this recipe over the real thing. Times are a guess.

3 servings 55 min 45 min prep

6 slices bacon
1/3 cup margarine
1/3 cup all-purpose flour
3 1/2 cups milk
2 large baked potatoes, peeled and cubed
2 green onions, chopped
5/8 cup shredded cheddar cheese
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Place bacon in a large, deep skillet.
Cook over medium heat until browned.
Drain, crumble, and set aside.
In a stock pot or Dutch oven, melt the margarine over medium heat.
Whisk in flour until smooth.
Gradually stir in milk, whisking constantly until thickened.
Stir in potatoes and onions.
Bring to a boil, stirring frequently.
Reduce heat, and simmer 10 minutes.
Mix in bacon, cheese, sour cream, salt, and pepper.
Continue cooking, stirring frequently, until cheese is melted.

Loaded Baked Potato Salad
Yield: 2 quarts

“This salad involves everything you would put on a loaded baked potato–sour cream, bacon, cheddar, chives, onion, butter–in a refreshing presentation. Potatoes are great vehicles for flavor, whether they’re hot or cold!” - Kenny Bowers

INGREDIENTS:

4 pounds Idaho potatoes, peeled
1 pound bacon, crisply cooked, and chopped into 1/2-inch pieces (fat reserved, if desired)
4 ounces unsalted butter, softened
1/2 cup chopped green onions
2 cups grated or shredded cheddar cheese
1 1/2 cups sour cream (regular or low-fat)
1 tablespoon black pepper
1 teaspoon salt

DIRECTIONS:

Cook whole potatoes in boiling, unsalted water until tender. Refrigerate until chilled, then chop into one-inch pieces.
Transfer the potatoes to a large bowl along with the remaining ingredients and thoroughly combine. Add some of the reserved bacon fat if desired.
Chill at least 2 hours before serving. Adjust the seasoning prior to serving.

Note: Any condiments or toppings typically added to a loaded baked potato may be used for this recipe.

Twice Baked Potatos

i would bake the potato then you cut the potato in half and scoop out the insides.....make sure you dont rip the skin

mix the scopped potato with the sour cream, butter, bacon, green onions and about 2 tablespoons of milk.....mix together untill smooth.....

add mixture back to potato skins and top with cheese...put back in oven for 5 min....

try a stuffed potato, scoop out the insides put in a bowl take the sour cream butter & milk, add a little garlic & mix. Deep fry the skins then put the stuffing back in the skins, add your toppings bacon & the onions & add some cheese to it. bake in the oven for 5 minute or until cheese is melted

Twice-baked potatoes:

Bake the potatoes
Scrape out the insides, leaving the shells intact.
Mix the insides with the other ingredients, reload them back into the shells and bake at 350 until they are brown on top.

You could also do Potatoes Au Gratin, Baked Potato Soup or just loaded baked potatoes. Rosemary is always good on potatoes.

Use butter to cook bacon and the potatoes home-style (add with seasoning salt, pepper, garlic and onion powder for taste.) Serve on a plate with the bacon,and a dollop of sour cream garnished with green onions.

Microwave the potatoes until 90 percent done. Cut into dipping wedges and pan fry them with the green onions, butter, paprika, minced garlic, and sea salt until crisp and golden brown. Sprinkle some Parmesan cheese while hot. Make a dip by using the Sour cream, bacon and green onion super finely chopped. Add some buttermilk to thin,and sage, teaspoon sugar,black pepper to taste.

Yum!

I would make twice-baked potatoes. You bake the potatoes almost till done, cut in half lengthwise and carefully scoop out the flesh. Smash and mix with all your other ingredients (bacon should be pre-cooked to crispy and broken up in bits) - return to the jackets and put back in the oven til it re-warms and top gets a bit toasty. For seasonings, I would add salt and pepper, a bit of garlic powder, and dill.

Make stuffed baked potatoes!

2 lg. potatoes, baked
2/3 c. part skim Ricotta cheese
2 tbsp. part skim Mozzarella cheese, grated
2 tbsp. Parmesan cheese, grated
2 tbsp. chives, finely chopped
Salt and pepper to taste
(add your bacon, cooked, and green onions, finely chopped)

Slice potatoes horizontally, carefully scooping flesh into bowl. Reserve shells. Combine potato with remaining ingredients, stir until smooth and divide among four shells. Pile high. Bake potato halves 15-20 minutes or until golden brown. Serve hot. And put your sour cream on top! YUM!

peel and cube potatoes.put potatoes i n water [ just cover potatoes with water about a inch over them] boil them until thay are tender enough to mash.drain off water,put potatoes,1/4th cup sour cream .1 tablespoon butter,3 tablespoons milk and whip with an electric mixer until creamy,add bacon and green onions and mix well.put in a casserole dish and bake in oven on 275 degrees for ten minutes. take out of oven and sprinkle with shredded cheese of your choice,put back in oven just until cheese has melted.you can also take a pound of hamburger an fry it up as if making maid rites,put the hamburger on bottom of casserole then spread potato mixture over hamburger, then bake the same way. this is really a very good dish to fix either way.
