These two became my top favorites this summer.

Blackberry Lemon Ice

1 cup water
1/2 cup sugar
4 cups frozen blackberries
1/4 cup fresh or bottled lemon juice

Boil the sugar and water for about 2 minutes. Cool slightly. Put in a blender with the partially thawed blackberries. Blend until smooth. Push the mixture through a sieve so the seeds are removed. Add the lemon juice to the mixture, blend well. Pour into a 9x13 pan. Freeze about 1 1/2 hours. Use a fork to break up the mixture. Freeze another hour. Break up again with the fork and serve. (If serving later, thaw a bit until you can break up the mixture with a fork.)

Best Ever Salad

Baby Spinach leaves or butter lettuce & radicchio mix
Dried Cranberries
Slivered Almonds (spread on a plate, sprinkle with sugar, microwave 2 minutes)
Thinly sliced apple (Fuji are best)
Poppyseed Dressing

Stir all together. Let sit for 30 minutes and then serve.

Peanut Butter and Chocolate Marble Brownies

I can guarantee you that these are to DIE for and once you've eaten one, you have to eat another, they are quite addictive. I have a friend who made these when she discovered this recipe and her and her hubby HAD to eat the WHOLE thing in 1 or 2 days, I forget now....lol.

Ingredients
1 cup butter, softened
1-1/3 cups granulated sugar
1 cup packed brown sugar
4 eggs
1/4 cup milk
1-1/3 cups all purpose flour
1 teaspoon baking powder
1/2 cup creamy peanut butter
1 cup peanut butter baking chips
1/2 cup Hershey® low fat cocoa
1 cup semi-sweet chocolate chips

Procedure
1. Cream butter, sugars, eggs and milk together on medium speed of electric mixer until blended.

2. Add flour and baking powder, mixing until smooth.

3. Divide batter in half. Stir peanut butter and peanut butter chips into one half. Stir cocoa and chocolate chips into other half.

4. In greased 13 x 9 inches pan, alternate spoonfuls of batter in checkerboard pattern, using about 8 spoonfuls of each. Swirl through batter to create a marble effect.

5. Bake at 350°F for 30 - 35 minutes or until set.

6. Cool completely then cut into squares.

NOTE

Top with a chocolate frosting if desired. You may freeze these for later consumption. IF you've got ANY leftovers, might be a good idea to make these ahead for Christmas time.

Serving size: About 36 squares.

Smoked Salmon Pizzetta

Use a pizza base but it's also nice with a tortilla base ( garlic flavoured optional ). Heat base in the preheated oven for 10 minutes, so it's crispy. Put 3-4 slices of smoked salmon, about 6 cherry tomatoes cut in half, slices of spring onions on the pizza base. Sprinkle with olive oil and diced fresh basil leaves. Also, if you like garlic you can use garlic flavoured olive oil.

Oreo Bon Bons

1 pkg. Oreos
1 pkg. Cream cheese, softened
1pkg. White almond bark

Chop Oreos using a food processor. Then mix Oreos with the softened cream cheese. Next melt almond bark in microwave in large bowl. You don't have to melt them bark all at once. Form the Oreo mixture into balls and dip in melted bark. Then place on wax paper to set up. I like to top them with a few reserved dry crumbs while they are still wet. Of course they need to be refrigerated before serving.

chop up one pound bacon, and one large onion, saute till onion is translusent.and bacon is simi crisp. add one large and one small can chopped tomatoes, approx. one half tlbs. oregano, salt and pepper to taste, done, serve over cooked spagetti noodles , its wonderful.
