I suggest the new "Stir-Fry" items...in the frozen entree section of your grocery story. Look for them in a
BAG like vegetables.. Usually there is pasta, veggies, & cheese, and sometimes chicken.
I LOVE THEM...There are so many different ones, it would be hard to be bored with them to choose from

My picky, won't eat veggies, 3yr old ate 5 or 6 of these tonight with spaghetti.
Fried eggplant strips with seasoned cornmeal coating, topped with Parmesan cheese. Serve these eggplant strips with a little marinara sauce on the side, if desired.
INGREDIENTS:
1 eggplant (about 1 pound)
1 teaspoon salt
3/4 cup cornmeal
1/4 teaspoon white pepper
1/8 teaspoon garlic powder
vegetable oil
1/4 cup grated Parmesan cheese
PREPARATION:
Peel eggplant, and cut into 2- x 3/4-inch strips; sprinkle with salt, and let stand 30 minutes. Pat dry. Combine cornmeal, pepper, and garlic powder. Dredge eggplant in cornmeal mixture, and fry in deep, hot oil (375°) until golden brown, cooking only a few at a time.

It does get very boring and very challenging to come up with some interesting new meals. While watching tv, I would scan magazines and tear out yummy recipes. If there was something in it we didn't like, I would leave it out or exchange it for something we did like. I also made a "master list" of all the things we like, because sometimes you forget something. I got a small notebook. Each page had a title on it ...beef...chicken...seafood, etc. List under each heading all the foods that you like. When I was stumped, I would get out my master list. Of course, as you find new foods, you just add them to the list. I also scan cookbooks looking for easy recipes that I know my family will like. I didn't do this all at once, just slowly through the years as we got sooooo bored too.

I agree with the stir fry suggestion... we eat a lot of that at our house. We also do a lot with potatoes - you can fry 'em (cut into smallish chunks and season), mash 'em, bake 'em (taco type toppings are fun and easy) which is another good suggestion - tacos! Sloppy joes (seasoning packets are inexpensive, you only need buns, tomato paste and a pound of burger in addition)... steak can be marianted tons of different ways... and back with the potatoes - cheesey taters (shredded with cheese and other ingredients and baked). Check out recipezaar.com, they have lots of recipes that you can search through many different ways.

Check out Rachel Ray's web-site from her show, they even tell you the grocery list for the next day, and a big perk it that her food is usually really good! Hope that helps!
