I once had to do a leaf collection and I went to a forest 3 hours away from my house to do some collecting. I stuck them in a ziploc bag that was jammed full of leaves and went home. The teacher changed the assignment and I forgot about the leaves. A week later most of the leaves still had color and were flexible.
Short answer: no.

When you pick the leaves, cut a tiny bit off the end of each stem, and wrap it in wet paper toweling or newspaper. Assuming you only have to keep them in zip-loc bag overnight, you can go ahead and close the bag. If they were left in the bag for a long time, you would need to separate them with layers of paper toweling to absorb moisture to keep them from "drowning" in their own moisture as respiration continues.

No. I think exposure to oxygen would make the leaves die. However, the dry leaves could be easily torn or broken apart in the bag.
