Does any body have a broccolli and cheese casserole dish recipe with real cheese and not that velveta stuff??Every recipe I find uses velveta and I do not care for it. Thanks!!!!

My mom has always used this simple recipe
1 bx of frozen brocolli
2 eggs
1tbsp mayo
1 can cream of chicken
1 pk of shredded cheddar cheese

This is a really simple recipe you might have to add some salt for flavoring and make sure that the broccoli is completely thawed out or you willl end up with a lot of water and that veggie gives off water.

Broccoli au Gratin
Ingredients
1 1/2 lb. Fresh broccoli
3/4 t. Salt
3 t. Butter
3 t. Flour
1 1/2 c. Milk
3/4 c. Grated cheddar cheese
Bread crumbs
Paprika

Preparation
Cook and drain broccoli. Place in greased casserole. In pot, combine butter and flour thoroughly. Add milk gradually, stirring. Bring mixture to a boil; continue stirring. Reduce heat. Sprinkle with 1/2 t. salt. Cook for 1 minute longer. Add cheese; cook until cheese melts. Pour over casserole. Top with crumbs. Bake at 325 for 25-30 minutes. Garnish with paprika.

Broccoli Casserole with Cheese

1 package (10 ounces) frozen broccoli cuts
3 eggs
1/2 cup mayonnaise
1 small onion, finely chopped
1/2 cup shredded sharp Cheddar cheese
salt and pepper

Cook broccoli 3 to 5 minutes; drain. Whisk together eggs and mayonnaise; add broccoli and onion and cheese. Add salt and pepper to taste. Place in a greased casserole. Bake at 350° for 35 to 40 minutes.

Broccoli, Cheese, and Rice Casserole:

1 cup uncooked instant rice
1/2 cup chopped onion
1/4 cup fat-free milk
4 ounces light processed cheese, cubed (such as Velveeta Light)
2 tablespoons butter or stick margarine, softened
2 (10-ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted

Preheat oven to 350°.

Combine all ingredients in a large bowl, and spoon into a 2-quart casserole. Bake at 350° for 45 minutes.

Yield: 8 servings (serving size: 1/2 cup)

BROCCOLI RICE AND CHEESE CASSEROLE

1 medium onion, finely chopped
2 10oz pkgs of frozen broccoli, cooked and drained
1 stick of butter
2 can cream of chicken soup
6 cups of wild rice
1 clove of garlic
3 cups of shredded cheese, your favorite

Preheat oven to 350°F.

In a skillet melt the stick of butter. Sauté onion and garlic, until onions are tender. Set aside to cool.

Steam the frozen broccoli until thawed, then drain well. Let cool.

Cook wild rice according to directions. (Use any type of rice desired; wild rice is exceptionally good in this recipe).

It is important to allow the warm ingredients to cool before mixing everything together so the cheese doesn't melt too soon.

When sufficiently cool, reserve 1/2 cup of the cheese and mix remaining ingredients together. Put in a oven-proof baking dish or casserole dish (or 2 if needed).

Spread reserved 1/2 cup of cheese on top. Cover with foil.

Bake for 20 minutes, remove foil; bake an additional 5 to 15 minutes, or until cheese on top is hot and bubbly.

Make approx 12 servings, recipe can be cut in half.

"Quick Vegetables Au Gratin" - 4 to 6 servings

Heat oven to 325*. Stir together 1 (10 3/4 oz.) can condensed Cheddar cheese soup, 1/2 teaspoon Worcestershire sauce and 1/2 teaspoon dry mustard. Gently stir into 2 cups cooked vegetables.
Pour mixture into ungreased 1-quart casserole. Sprinkle with 1/2 cup Crumb Topping (recipe follows). Bake uncovered, 15-20 minutes or until heated through.

CRUMB TOPPING FOR VEGETABLES:
1/2 cup dry bread crumbs
1 tablespoon butter or margarine; melted
1/8 teaspoon salt
Stir together all ingredients. Sprinkle over hot cooked vegetables or creamed vegetables. Makes 1/2 cup.

Hi good evening! While reading your question about only finding recipes with Velveeta, may i suggest that you replace it with the real cheese. If you find a casserole dish with ingredients that you like then experiment . Below is a couple food sites you may like to check out too or try this one....good luck!

Ingredients:
1 stick butter
1/2 cup chopped onion
1 (16 1/2 oz.) cream mushroom soup
1 1/2 cup grated cheese
2 pkgs. frozen broccoli
2 cups cooked rice
crushed potato chips

Instructions:
Saute onion in butter until tender.
Add soup, cheese and broccoli.
Add rice, mix well.
Place in 2 qt. casserole. Top with chips.
Bake 350 degrees for 35-40 minutes.

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
1/4 cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 sleeve Ritz crackers crushed
2 tbsp. butter

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
Place frozen broccoli into a very large mixing bowl. Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper Top with crushed crackers and dot with butter.
Bake for 45 minutes to 1 hour. Until top golden brown

Broccoli Lovers Casserole

2 pkt (10 oz) frozen chopped
Broccoli, drained
2 cup Round butter flavored
Crackers, crushed
1/3 cup Butter, melted
1/4 cup Onion, grated
3/4 cup Mayonnaise
1 can (10 1/2 oz) cream of
Mushroom soup
2 x Eggs, beaten
1 1/2 cup Cheddar cheese, shredded

Place packages of frozen broccoli in microwave safe dish and microwave on high power 5-6 min. until defrosted. drain. set aside. combine crackers and melted butter. place 1/2 of the crackers in the bottom of a 10 oz quiche dish or pie plate. combine broccoli with remaining ingredients. mix well and pour over the prepared cracker base. top with remaining crackers. microwave on med. (50%) power for 18 to 21 min. or until mixture is set.

DUTCHESS COUNTY BROCCOLI AND CHEESE CASSEROLE

4 medium-size heads broccoli
3 eggs, beaten
1 cup ricotta cheese
1/3 cup grated Cheddar cheese
1 tablespoon cornstarch diluted in 1/2 cup milk
1 medium onion, chopped
Salt and freshly ground black pepper to taste




1. Preheat the oven to 350°. Boil the broccoli heads in water for about 10 minutes. Drain them, and then chop them coarsely, including the stems.
2. Beat the eggs in a deep bowl, add the ricotta and cheddar cheeses and the cornstarch-milk mixture. Mix thoroughly. Add the chopped onion, salt, and pepper. Add the drained broccoli, mix again, and blend the ingredients well.

3. Butter thoroughly an ovenproof baking dish and place the broccoli mixture in it. Bake for about 30 minutes. Serve hot.

This broccoli and cheese recipe is made with frozen broccoli spears and an easy cheese sauce.
INGREDIENTS:
16 ounces frozen broccoli spears
12 ounces shredded process American cheese
2/3 cup milk
1/2 teaspoon onion powder
dash ground cayenne or hot pepper sauce, if desired
salt and pepper, to taste
PREPARATION:
Prepare broccoli according to package instructions. In a saucepan over medium heat, combine remaining ingredients. Heat, stirring frequently, until cheese is melted and mixture is smooth, about 7 minutes.

Taste and add salt and pepper as desired. Pour sauce over broccoli arranged on a serving platter or in a bowl, or serve sauce separately.
