I like to marinate mushrooms in a mixture of lime juice and low salt soy with garlic (1/4 cup soy, 1/4 cup lime juice, 1/2 cup olive oil and 2 large crushed cloves of garlic) then alternate the mushrooms with wedges of onion and pieces of yellow pepper. Soak the skewers first, marinate the mushrooms for 30 minutes, skewer the veggies, and brush everything with olive oil (add another clove of crushed garlic if you like) while grilling.
For a different flavor, add chunks of unsweetened pineapple in with the veggies, but you have to turn these more often to keep the pineapple from burning, so you may want to make the other veg. pieces slightly thinner so they'll cook quicker.
Another fun veggie skewer is chunks of potato (boiled for 2-3 minutes first then brushed with olive oil and sprinkled with rosemary) alternating with marinated mushrooms and chunks of onion. Delicious!

You can't go wrong with a little salt, pepper, and Garlic powder. Then if you can find it...add Cavendars Seasoning to it. It's a great flavoring tool to use in just about any kind of cooking. Careful not to let your vegatables burn...you'll have to turn them alot and keep them out of the direct flame....you can use what is called indirect heat...which on a gas grill is only lighting one half of the grill and setting the meat or veggies to the side so any fire that sparks up won't char them....on charcoal try to leave a certain amount charcoal free on the bottom and then place the skewers over that area...they'll still get the smoky flavor....

Spicy Rice with vegetable kabobs
RICE:
1 tbl olive oil
1 lrg onion finely sliced
2 x cloves garlic crushed
1 x bay leaf
4 whl dried clove buds
1 tbl garam Marsala
1 tbl turmeric
9 oz basmati rice (white or brown)
1 1/2 pt water
3 oz Giant Raisins
3 oz Dried Apricots chopped
2 oz toasted flaked almonds for garnish
KEBABS:
8 oz zucchini (courgettes )
8 lrg cherry tomatoes
1 lrg red onion
8 whl button mushrooms
1 x green bell pepper
1 x red bell pepper
1 tbl olive oil
1 tbl lemon juice
1 tbl chopped fresh thyme
salt and pepper
1 tbl fresh thyme leaves for garnish
1. Prepare the Rice: Heat oil in a saucepan and fry the onion until softened. Add garlic, bayleaf, cloves, garam marsala, turmeric and a pinch of salt. Cook with onions for 2-3 minutes. Add rice to the pan and toss together until the grains of rice are coated in the spices. Pour in water, add raisins and apricots. Cover and simmer for 10 - 12 minutes until the water has been absorbed and the rice is tender. Increase cooking time by 10 minutes when using brown basmati rice.
2. Meanwhile, prepare the vegetables for skewering. Cut the zucchini into round-slices as thick as a button mushroom is tall. Cut the onion into 8 wedges: Peel outer skin from onion but do not cut the root end; it will help hold the onion together while it cooks. Cut the bell peppers into 1 or 1-1/2 inch pieces.
3. Meanwhile, preheat the grill or broiler. Thread alternate pieces of zucchini, tomato, red onion, mushroom and the peppers onto skewers.
BASTING SAUCE: mix together the olive oil, lemon juice and thyme and brush over kebabs. Season with salt and pepper. GRILL and cook until vegetables are tender, basting and turning regularly.
4. Plate the rice; garnished with almonds. Serve kabobs on top and garnish with fresh thyme. Dry roast or pan to taste slivered almonds; cool and crush

A really easy idea that is totally yummilicious is to soak the veggies in italian salad dressing. Let them soak as long as you like then skewer and grill. So very simple and so yummy!

I like soy sauce and garlic.
You can use Rosemary sprigs as skewers, too.
Some herbs and spices that go with vegetables:
Basil (tomatoes)
Chili powder (corn, onions)
Cinnamon (carrots, onions)
Marjoram (potatoes)
