Kahlua is so good.. :)

4 cups water (boiling)
3 cups sugar
12 teaspoons instant coffee (not decaf and NOT cheapo PLEASE)
2 cups vodka
3 teaspoons vanilla



1. Simmer the water, sugar and coffee for at least 2 hours.
2. Stir occasionaly. It will be a runny syrup.
3. Allow to cool.
4. Add at 2 cups vodka.
5. Add vanilla.
6. It is good now but will be better in about 2 weeks.

Chocolate-Kahlúa Brownies:

1 1/2 cups sugar
1/2 cup egg substitute
1/4 cup margarine, melted
3 tablespoons Kahlúa (coffee-flavored liqueur)
1 1/4 cups sifted cake flour
1/2 cup unsweetened cocoa
1 teaspoon baking powder
1/2 cup finely chopped walnuts
Vegetable cooking spray

Combine first 4 ingredients; stir well. Combine flour, cocoa, and baking powder; stir into sugar mixture. Fold in walnuts. Spoon into a 9-inch square baking pan coated with cooking spray. Bake at 325° for 30 minutes or until a wooden pick inserted in center comes out clean. Let cool on a wire rack.

Yield: 16 servings

This recipe is over 20 years old from a co-worker. Make sure to use a good quality brand of vodka. And use Kava Instant Coffee! It has less acid than other brands. (When I make it, I slit the vanilla bean before adding to liquid.)

KAHLUA: (makes 1/2 gallon)

1 quart vodka
1 oz. instant coffee (KAVA)
4 cups bar sugar (super fine)
1 vanilla bean
distilled water

Add instant coffee to 1 cup of boiling water and stir until dissolved. While water is still hot, add 4 cups sugar and stir until dissolved. When mixture is cool, add 1 quart vodka and stir. Pour mixture into 1/2 gallon container. Add cool water (recommend boiled or distilled water) to bring level to 1/2 gallon. Add vanilla bean. Cap and let stand for 2 weeks.

By rights Kahlua is made with Alcohol and not Vodka or Rum
