I adopted a 1 year old female cocker spaniel, she doesnt bark at anything is this normal? she wont bark at other animals, cars, the door bell, the knock on the door, nothing...... normal? anything i should do?

she's probably just a mellow dog

Well, assuming she's never had her voice box removed (and I so hope that she hasn't)... consider it a blessing!
Some breed just don't bark as much as others. My Doxie is a yappy little thing, but my Border Collie only barks if she's scared of something or sees a squirrel in the yard.

They are not known for barking. Maybe yours just doesn't at all.

Did she get a check up? If not call a vet...if they say she's fine then be happy you dont have a barker!
