12 cups popcorn, popped, unsalted, and unbuttered
1/2 cup margarine
1 cup brown sugar, firmly packed
1/4 cup corn syrup, light or dark
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon vanilla



1. Preheat oven to 250 degrees. Place popcorn in a large, 4" deep, buttered baking pan. Keep warm in oven.
2. Butter a 15-1/2"x10-1/2"x1" shallow baking pan. In a large saucepan, melt butter over low heat. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat and quickly stir in baking soda and vanilla.
3. Remove popcorn from the oven. Slowly pour syrup mixture over popcorn, mixing well. Turn mixture out onto buttered, shallow baking pan.
4. Bake for 1 hour, stirring every 15 minutes. Remove from oven. Cool completely. Break apart if necessary. Store in a tightly covered container.

Heat oven to 350°F. Butter bottom of 15"x10" jelly roll pan or large cookie sheet. In mixing bowl, beat butter and brown sugar until light and fluffy. Place popcorn on baking pan; mix in butter and brown sugar mixture. Bake at 350°F for 7 to 8 minutes, stirring halfway through baking. Stir well after baking; cool. Store in tightly covered container.

Caramel Corn Recipe

2/3 cup unpopped corn

1 tablespoon salt
1/2 teaspoon baking soda

Preheat oven to 250. Pop the corn, and place in a large roasting pan. Mix the brown sugar, margarine, and corn syrup in a saucepan and bring to a boil for 5 minutes. Using a beater, mix in the baking soda. Pour the syrup over the corn and mix thoroughly. Place in oven for one hour, stirring every 15 minutes.

Crispy Caramel Corn:

1 cup sugar
1/2 cup butter or margarine
1/2 cup light corn syrup
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 (3-ounce) packages microwave popcorn, popped (16 cups)
1 cup mixed nuts (optional)

Stir together first 5 ingredients in a saucepan; bring to a boil over medium heat, stirring constantly. Remove mixture from heat, and stir in soda.

Place half of popcorn and, if desired, nuts in each of 2 lightly greased shallow roasting pans. Pour sugar mixture evenly over popcorn; stir well with a lightly greased spatula.

Bake at 250° for 1 hour, stirring every 15 minutes. Spread on wax paper to cool, breaking apart large clumps as mixture cools. Store in airtight containers.

Yield: Makes 4 quarts

Amaretto Caramel Corn
Yield: 1 Servings


3 qt popped popcorn
1 c unblanched whole almonds
1/2 c margarine or butter
1/2 c brown sugar; packed
1/2 c amaretto

Instructions

Heat oven to 250~. Arrange popcorn on 2 jelly roll pans; sprinkle almonds
over popcorn. In small saucepan, melt margarine over low heat; stir in the
brown sugar and amaretto. Bring to a boil, stirring occasionally. Boil 3
minutes. Remove from heat. Pour over popcorn; toss until thoroughly coated.
Bake at 200~ for 1 hour; spread on foil or wax paper to cool. Store in
loosely covered container.

CARAMEL CORN PUFFS

2 sticks butter
2 c. brown sugar
1/2 c. Karo (light)
1/2 tsp. vanilla
1/2 tsp. baking soda
2 pkgs. corn puffs

Boil for 5 minutes: butter, brown sugar and Karo. Stir in vanilla and baking soda. (This will bubble up.) Pour over corn puffs and stir until well coated. Add nuts if you wish. Bake at 250 degrees for 1 hour. Turn every 15 minutes.

Go to Walmart and buy the Act II caramel corn popcorn. Its yummy and easy to make.

step 2) push popcorn into unwrapped carmel cubes
