Apple And Green Tomato Relish

1 1/2 c apples; finely chopped
1 c green tomatoes; finely
-chopped
1/2 c red pepper; finely chopped
3/4 c white vinegar
1/4 c onion; finely chopped
1/4 c green pepper; finely chopped
1 tb dry mustard
1 tb salt
1/2 ts allspice
1/2 ts black pepper; coarse
1 ts mustard seed
1/4 ts crushed red pepper
1 bay leaf
3 1/4 c granulated sugar
1 box certo light fruit pectin - crystals

Instructions

MEASURE prepared fruit, vegetables, vinegar and spices into a large
saucepan. MEASURE sugar and set aside. COMBINE fruit pectin crystals with
1/4 cup of measured sugar. STIR pectin mixture into fruit and vegetable
mixture. PLACE saucepan over high heat and stir until mixture comes to a
full boil. STIR in remaining sugar. Continue to cook and stir over high
heat until mixture comes to a full rolling boil. Boil hard 1 minute,
stirring constantly. Remove from heat. STIR and skim foam for 5 minutes
Makes 6 cups Prep. time: 20 minutes Cooking Time: 20 minutes

I think you really want green tomitilla salsa.

The best American name for this vegetable would probably be "Mexican green tomato", but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked.

PINEAPPLE TOMATILLO SALSA

2 T. freshly squeezed orange juice
1/4 C. freshly squeezed lime juice
2 T. freshly squeezed grapefruit juice
1 tsp grapefruit zest
1C. cooked, pureed tomatillos
1C. pineapple, diced into 1/2-in. pieces
1/2 C. red onion, minced
2 tsp. garlic puree
1T. canned chipotles, minced
3/4 tsp fine sea salt
1C. red bell pepper,diced
1/2 tsp minced epazote (mexican tea leaf)
1/4 C. cilantro,coarsely chopped

Mix together a "Seville orange juice" from the first four salsa ingredients. Stir together Seville orange juice with the rest of the salsa ingredients.
This is excellent with broiled tuna.
I prefer to omit the cilantro to me it adds a strong bitter flavor. But, every one loves it either way.
