It can't get simpler than this.
1 1/2 lbs. ground beef
1 large onion, chopped
1 can tomato juice
1 large can diced tomatoes
3 cans dark red kidney beans
chili powder
salt and pepper
Brown ground beef with salt and pepper and chopped onion; drain. Add tomato juice, tomatoes (go ahead and throw in the juice from these cans, too) and beans, with liquid. bring to simmer, then add chili powder until it turns a rich, reddish-brown color. Allow to simmer for a while longer, then taste. If it doesn't have enough kick for you, add more chili powder, or use what I use; A few splashes of habenero sauce. If all you can taste is the tomatoes, add a little more salt, or a few pinches of table sugar.

A batch of this versatile crock pot chili recipe can be served various ways. This slow cooker chili is satisfying with ground beef and beans in a seasoned tomato sauce. In a skillet, cook beef and onions over medium heat until no longer pink; drain well and transfer to crock pot. Combine the next 6 ingredients with the meat mixture. Stir well, cover and cook on low for 8 hours or on high for 4 hours. Salt and pepper to taste.
Yield: 8 servings

Basic chili

2 quarts canned tomatoes, with juice (equivalent to 8 cups)
* Use a 5 quart heavy saucepan to brown the beef with the onions and garlic. Drain. Add all ingredients and bring to a boil.
* Reduce heat and simmer for about 15 minutes. Serve warm, topped with cheese, crackers and chopped green onions.

Crockpot Tex Mex Chili
Yield: 4 Servings
Ingredients
1 lb ground beef or pork sausage
2 cloves garlic; minced
3 or 4 tsp. chili powder
1/2 ts ground cumin
1 (15 1/2 oz.) can red kidney
-beans d
1 c chopped celery
1 c chopped onion
1/2 c chopped green pepper
1 (16 oz.) can tomatoes; cut
-up
1 10 can Rotel tomatoes and
-chilies
1 c V8 juice or tomato juice
1 (6 oz.) can tomato paste
1/4 ts salt
Shredded Cheddar cheese
Sour cream
Instructions
In skillet brown meat and garlic. Drain. Stir in chili powder and cumin;
cook 2 minutes more. Meanwhile in 3 1/2-, 4, 5, 6 - quart crockery cooker
combine beans, celery, onions, green pepper. Add undrained tomatoes,
tomatoes and chilies, vegetable juice, tomato paste and salt. Stir in
cooked meat.
Cover cook over low heat setting for 10-12 hours or on high 4-5 hours.
Ladle chili into soup bowls. Pass shredded cheese and sour cream with
chili.
Serves 4 to 6.

1 small onion
brown in the skillet both of the above items.
1 can of Brooks chili mix
2 cans of stewed tomatoes
2 Tablespoons chili powder
salt and pepper to taste
pinch of red pepper
put on low in the crock pot/you can eat at anytime after it has heated through as all of the items have already been cooked.
You can adjust your recipe by adding more meat, or an extra can of kidney beans.

3 Bean Chili Day Chili
1/2 lb. cooked white chicken meat
1 lb. cooked lean ground beef
1 each chopped, red and green pepper
3 cloves garlic chopped
1 (16 oz) can tomatoes cut up
1 can each, black beans (drained and rinced) red kidney beans and drak red kidney beans (both with the liquid) 1 (8oz) can tomato sauce
3 tbsp.. chili powder
1/2 tsp. crushed dried basil
1 tsp Tabasco sauce
Place everything, except beans , in a crockpot on low for about 3 hours. Add the beans and cook an additional 1/2 hour. Great with Italian bread

1 pound boneless top sirloin steak, cut into 1-inch cubes
2 onions, chopped
1 medium-size green bell pepper, chopped
1 jalapeño pepper, seeded and chopped
3 to 4 garlic cloves, minced
1 1/2 teaspoons salt, divided
3 tablespoons olive oil
1 (28-ounce) can crushed tomatoes
1 (12-ounce) bottle dark beer
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon sugar
2 teaspoons dried oregano
1 1/2 teaspoons ground black pepper
1/4 teaspoon ground red pepper
2 cups beef broth
3 (15-ounce) cans black beans, rinsed and drained
Garnish: shredded Cheddar cheese
Cook first 5 ingredients and 1/2 teaspoon salt in hot oil in a large Dutch oven over medium-high heat, stirring constantly, 8 minutes or until beef browns and vegetables are tender.
Stir in remaining 1 teaspoon salt, crushed tomatoes, 1/2 cup beer, and next 6 ingredients, and simmer, stirring occasionally, 30 minutes. Stir in remaining 1 cup beer, broth, and beans, and simmer, stirring occasionally, 45 minutes or until thoroughly heated. Garnish, if desired.
Yield: Makes 12 cups

TEXAS CHILI
2 lb very lean ground beef or diced chuck steak
7 T chili powder
1 T ground cumin
2 t paprika
1 onion, finely chopped
2 t salt
1 1/2 t cayenne pepper
2 T masa
1 8oz. can tomato sauce
1 15oz. can red beans (optional)
1 15oz. can tomatoes(whole or diced, drained) optional
Brown ground beef and drain. Stir in tomato sauce and 2 cans of water. Mix all ingredients except cayenne pepper and masa. Simmer 30 min. Add as much pepper as desired. Mix masa and 1/4 c warm water. Add to chili and stir well. Add Tomatoes or beans if desired. Simmer 20 min.
Of course, feel free to add more or less pepper. I usually serve it over rice or with tortilla chips, sometimes both. Enjoy ;)

Super Speedy Chili
1/2 lb. lean (at least 80%) ground beef
2 cans (14.5 oz. each) stewed tomatoes, undrained,
cut up.
1 can (15 oz.) spicy chili beans, undrained
3 teaspoons chili powder
Shredded Cheddar cheese, if desired
1.) In 3-quart saucepan or 10-inch skillet,cook ground beef over medium-high heat, stirring frequently, until thoroughly cooked; drain.
2.) Stir in remaining ingredients. Heat to boiling. Reduce heat to medium-low; simmer uncovered 5 minutes, stirring occasionally. Top individual servings with cheese.
Tip: For even leaner chili, you can substitute ground turkey for the ground beef if you like.
