I want to try to stay away from the usual, like peanut butter cookies, peanut butter pie....
Any candy, cookie, pie, or cake made with peanuts, peanut butter, peanut oil is acceptable.

"Rocky Road Candy" - 4 dozen candies

1 (6 oz.) pkg. semisweet chocolate pieces
1 (1 oz.) square unsweetened chocolate
1 tablespoon butter
2 eggs
1 1/4 cups confectioner's sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 cups salted peanuts
2 cups miniature marshmallows

Melt chocolate pieces, chocolate and butter in large saucepan over low heat, stirring until smooth. Remove from heat.
Beat eggs until foamy. Mix in sugar, salt and vanilla. Blend in chocolate mixture. Stir in peanuts and marshmallows. Drop by teaspoonfuls onto waxed paper. Chill 2 hours or until firm. Store in refrigerator; remove just before serving.


"Bird's Nests" (Haystacks) - 2 dozen

1 (12 oz.) pkg. butterscotch morsels
1 (5 oz.) can La Choy chow mein noodles
1 cup unsalted peanuts

Over double boiler pan, let water come to a boil; lower heat. Add butterscotch morsels to pan. When the butterscotch has melted to a smooth creamy consistency, add the noodles and peanuts.; mix well. Put a piece of waxed paper on a cookie sheet and place teaspoonful drops of the mixture on the paper. Place the cookie sheet in the refrigerator to cool and harden cookies.

Make a cheese cake with ground peanuts for the crust instead of graham cracker.

Add a carmel or chocolate sauce, and you are all set. New take on a old favorite.

I found a recipe for "peanut butter playdough" in a Disney magazine. It's very sweet and it's addictive.
Just basic proportions:
1 cup peanut butter
1 cup powdered sugar
1/2 cup clear corn syrup
1 tsp vanilla
It's hard to mix and does look like playdough.
The Disney resort that serves it uses Nilla Wafers to make Mikey ears on a playdough ball. Then they use pretzel sticks and choc. syrup as garnish.

How about making Rocky Road fudge. The peanut are dry roasted, does that matter? It also has mini marshmallows. Its yummy!

This recipe was a state fair prize winning entry at the North Carolina State Fair!

Preparation time: 20 min Baking time: 13 min
Yield: 48 bars

Crust Ingredients:

1/2 cup LAND O LAKES® Margarine, softened
1 (18.25-ounce) package pudding in the mix yellow cake mix
1 egg
3 cups miniature marshmallows

Topping Ingredients:

1/2 cup light corn syrup
1/4 cup sugar
1/4 cup firmly packed brown sugar
1/2 cup creamy peanut butter
2 teaspoons vanilla
2 cups crisp rice cereal
2 cups salted peanuts
1 cup candy corn

Heat oven to 350°F. Combine margarine and cake mix in large bowl. Beat on low speed until well mixed. Add egg; continue beating until well mixed.

Press on bottom of ungreased 15x10x1-inch jelly-roll pan. Bake for 12 to 15 minutes or until set and edges are lightly browned. Remove from oven. Immediately sprinkle marshmallows over hot, partially baked crust. Continue baking for 1 to 2 minutes or until marshmallows puff.

Meanwhile, combine corn syrup, sugar and brown sugar in large saucepan. Cook over medium heat, stirring until mixture comes to a boil (2 to 4 minutes). Remove from heat; stir in peanut butter and vanilla until smooth. Stir in cereal, peanuts and candy corn. Immediately spoon over marshmallows; spread to cover. Cool completely. Cut into bars.

Directions:

LINE 24 muffin cups with paper liners.

Add cereal and stir until evenly coated. Press a heaping tablespoonful of cereal mixture into each prepared muffin cup.

COMBINE butterscotch morsels and vegetable shortening in heavy-duty plastic bag. Microwave on MEDIUM-HIGH (70%) power for 30 seconds; knead. Microwave at additional 10- to 15-second intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over tops. Refrigerate until firm, about 1 hour. Store in sealed container.
