In view of what your colors would be, I would paint the ceiling a bright semi-gloss white. It hides imperfections very nicely and looks gorgeous at the same time. It will make your sage stand out nicely.

I've painted 2 houses, inside and out so I've learned from trial and error. The order from least shiny to shiniest is flat, eggshell, satin, semi-gloss and gloss. Flat does hide imperfections better and gloss is easier to clean so it's a trade off. I restrict the use of gloss to trim. I definitely would not put it on the ceiling. Ceiling paint is traditionally flat.
I recommend a Satin finish for the kitchen walls. Semi-gloss for the trim and flat for the ceiling. Both the Satin and Semi-gloss can be washed. A subtle camel color would be lovely on the ceiling and give the appearance that it's higher.

Flat paint will actually show all the imperfections. Semigloss is the best bet. The gloss will reflect light and hide the imperfections and it easier to clean. I love the idea of a sage kitchen, I would paint the ceilings a cream color or white depending on your flooring. If you have white floors use white (or if your cabinets are white) If you have hardwood floors or darker flooring, use cream. Good Luck!

Buy High Gloss or Semi Gloss dont use Flat paint at anytime for
your kitchen. I would use sage for the ceiling as well

Why not texture the ceiling? then no paint is needed. Its simple you put paper and or plastic down on the florr and cabinets. Skim coat the ceiling with thinned drywall mud and then stomp it with a texture brush. All imperfections are hidden and no paint color is needed to be decided. IT wont take more than 1-2 bucket of mud and about 5hrs tops unless your kitchen is huge beyond belief

There is a washable flat paint, but kitchens and bathrooms usually require gloss paint. Paint the ceiling white or off white, it keeps the illusion of a bigger room.

Go with a flat paint whatever you do. No wall is perfect it will hide most blemishes and it will still look classy in years to come. Buy the new paint that goes on pale blue and dries white. This will help you get full coverage the first time you do it.

Rule of thumb, Kitchen and Bath should ALWAYS ALWAYS ALWAYS be semi gloss, it does not hide as much, but it will clean, you can not clean any food slatter or dirt off flat, you have to just repaint that spot everytime it gets dirty, with semi gloss a wet rag will clean it right off... Also I would recomend an off white for the cieling, more of a cream type color

Gloss by far! It's much easier to clean and in the kitchen grease gets everywhere. If the contractor told you flat, then he is clueless.

Gloss paint can be washed. Flat paint tends to wash off.
In a kitchen I'd go with gloss. (food splatters you know)
I still think metallic green would be cool.
