Chicken Parmesan is easy and elegant. It's Italian so it's automatically romantic and perfect for candle light. All you do is thaw out the chicken breast (the frozen chicken breasts are nice because they are a uniform size), bread it a and fry it up. While you are doing that, make a side of your favorite pasta (linguine or angel hair works good). When you have the chicken and pasta done, arrange it on a plate and cover it all with cooked spaghetti sauce and top with mozzarella cheese. Place it in a broiler until the cheese is warm and bubbly and your dinner is ready. Serve with a simple salad and some garlic bread.

Honey I gotcha covered... I am a girlfriend and mother not too mention southern and here is all you need...
2 boneless chicken breasts, cut into chunks
1 tablespoon olive oil
2 tablespoons sun-dried tomatoes or 1/2 fresh tomato, chopped
2 tablespoons basil
1 1/2 tablespoons crumbled bacon
1 cup mushrooms, sliced
8 fluid ounces no-salt-added tomato sauce
4 fluid ounces half-and-half
2 tablespoons grated parmesan cheese
2 cloves garlic, minced
cooked pasta
Sauté the chicken in olive oil.
Turn and add the garlic, sun-dried tomatoes, and mushrooms.
When the mushrooms begin to darken, add the basil, bacon, tomato sauce and cheese.
Heat on low for 15 minutes.
Add the half and half and serve over pasta
Serve with a loaf of warm Garlic cheese bread and a WINE- Serve an off-dry sparkling wine that is slightly sweeter than this delightful, not-so-sweet sponge cake. .
And here is a perfect dessert
Grammys lemon sponge cake
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
1/4 cup extra-virgin olive oil
3 tablespoons milk
Finely grated zest of 1 lemon, plus 1 tablespoon fresh lemon juice
1 cup sugar
4 large eggs
2 cups individually quick-frozen raspberries (6 ounces)
directions
Preheat the oven to 350°. Lightly grease and flour a 10-inch round cake pan, tapping out any excess flour.
In a bowl, whisk the flour with the baking powder, baking soda and salt. In a small pitcher, mix the olive oil with the milk and lemon juice.
In a large bowl, using an electric mixer, blend the sugar with the lemon zest. Add the eggs, 1 at a time, and beat at medium speed until thick and pale, about 3 minutes. Beat in the dry ingredients, alternating with the olive oil mixture until the batter is smooth.
Pour the batter into the prepared pan and scatter the raspberries on top. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted in the center comes out with a few moist crumbs attached. Invert the cake onto a wire rack, turn it right side up and let cool completely. Cut the cake into wedges and serve.

If he's a meat eater, I would broil a steak. Season shell steaks or tbone steaks with worcherster sauce, and the garlic pepper seasoning you see in the spice aisle. When you broil the steak, watch it carefully because broiling will overcook your meat quickly. Keep it to 6 mins on each side if that. I would make a potatoe dish, and a salad. I would go on food.com for a potatoe recipe as the one I make is not simple.

STUFFED SHELLS
1/2 to 3/4 lb. ground beef
4-6 oz. cream cheese
1 can cream of mushroom soup, undiluted
3/4 to 1 c. cooked, chopped broccoli
Italian seasoning
Minced garlic or garlic powder
Minced onion
1 pkg. lg. stuffing size shells pasta
1 lg. jar Prego, Ragu, or Goya spaghetti sauce
Preheat shells according to package directions. This recipe will stuff a little more than half the package. Drain and cover with cold water to stop cooking and prevent sticking.
Brown meat with amount of spices to suit your taste. Drain liquid. Add cream cheese, broccoli and soup. If you like, you can add chopped fresh mushrooms for a bit more flavor. Cook and stir occasionally until cream cheese is thoroughly melted. Lightly grease or spray a large casserole dish. Gently fill each cooked shell with stuffing mixture and place open side up in casserole with edges just touching.
Pour spaghetti sauce over the shells. If desired, cover with shredded Mozzarella cheese or a mixture of 2 parts shredded Mozzarella and 1 part shredded Provolone cheese. Bake in 325 degree oven about 30-45 minutes or until heated through and cheeses are melted.
A variation of this recipe for seafood lovers: Melt cream cheese with about 3 tablespoons of butter. Add soup, broccoli, and precooked frozen salad size shrimp or shredded shrimp or crabmeat (imitation crab is great).
Die-hard Italian food cravers will love it with Italian sausage in place of the ground beef.
