On the back of the Skinner Lasagna boxes this a recipe called Virginia's Easy Lasagna. It's super simple and you don't have to cook the noodles. Instead of ricotta cheese cottage cheese can be substituted in this recipe because I've done it before. I hope you like it.

If it's because you don't like ricotta cheese, you can use cottage cheese instead. Otherwise, you just make your standard lasagna, and omit the ricotta. You could add extra cheese to make up for no ricotta.

get a pan add a some olive oil or sunflower oil and add 1 chopped onion and 2 crushed garlic add to pan then stir until onions soft then had lean beef mince of beef mince str until brown and then add tin of chopped tomatoes and stir then add 3 spoon fulls of tomato puree to make it more thicker simmer u don t have to soak pasta lasagna sheet u just add them layer by layer with white lasagna white sauce is 1 tablespoon of butter 1 tablespoon of flour 250ml of milk 1 tablespoon of grated Parmesan cheese Ground pepper to taste Put the butter into a saucepan on a medium heat. Melt the butter. Add the flour and cook for a minute, stirring all the time. Take off the heat. Add the milk a bit at a time. Stir each time to make sure it is smooth. When all the milk has been added, put the pan back on the heat. Bring to the boil. Keep stirring. Turn down the heat until it is just boiling (simmering). Cook for 2 minutes, stirring all the time. Take off the heat. Add the cheese to the sauce and mix. Continue to stir until the cheese has melted into the sauce. Season with the pepper.If the sauce is too thin, add a little bit more flour. If the sauce is too thick, add a little bit more milk. Don’t forget that adding more cheese to improve the flavour will also thicken the sauce. The trick is to keep stirring. grate some cheese low fat and add to top of the lasagna before u put it in the oven it will take 45 min to cook

If you don't care for ricotta or need a sub. for it. You can make a cooking pot full of white sauce seasoned with Parmesan cheese and a dash of nutmeg. This can be layered between your lasagna noodles and whatever else you want to use. A white meat chicken and mushroom with green peppers would be good with the white sauce.
For each cup of white sauce use : 3 tablespoons of butter or margarine along with equal amounts of white all purpose flour.
Mix the two together over a med. heat and then add 2 cups of whole milk and stir with a whisk until thick. Now add a 1/2 teas. salt and 1/2 cup Parmesan cheese. Adjust heat so it does not burn.
Multiply this sauce recipe according to how much you think you'll need. You might want to double it at first.
Boil the noodles set aside to cool....have sauce already made then take white chicken meat already boiled or use the rotisserie chicken from the store. Picked apart and set aside.
Saute mushrooms and garlic with green peppers in a fry pan. until soft..set aside.
Now oil a pan with olive oil and put a layer of your tomato sauce on the bottom then a layer of noodles...then veggies....noodles ..white sauce.....chicken.....noodles....tomato sauce ....keep building up then top with mozzarella and Parmesan cheese.
Use your recipe for baking usually 400 degrees for 15 min. then reduce to 350 degrees for 45 min. watch you might need aluminum foil to cover during cooking to prevent burning...
Just a note, I cook without measuring so use your judgment and compare measurements to your cookbooks suggestions.

You can sub cottage cheese for ricotta in any recipeyou like. This one is really good, though.
LASSGNA
Salt
1 package lasagna noodles
1 1/2 pounds lean ground beef
1 medium yellow onion, finely chopped
1 teaspoon minced garlic
1 tablespoon dried oregano
2 cans tomato soup
2 tablespoons apple cider vinegar
Nonstick cooking spray
2 cups cottage cheese (small curd)
2 cups shredded mozzarella cheese
Bring a large pot of water to a boil and add salt. Boil noodles according to package directions. Drain and arrange in casserole (see below).
While noodles are boiling, brown beef in a large frying pan over medium-high heat, adding chopped onion, garlic and oregano to meat as it cooks. When meat has browned, drain off fat and then add tomato soup and apple cider vinegar. Simmer for 20 minutes.
Preheat oven for 350 degrees F.
Spray a medium casserole dish with a nonstick cooking spray. Lay noodles lengthwise across bottom of casserole dish. Spread a layer of cottage cheese over top of noodles. Add a layer of meat mixture, then cover with mozzarella cheese and repeat for a total of 3 layers. Finish with a layer of cheese and bake for 30 minutes or until bubbling. Remove from heat and let stand for 5 minutes before cutting and serving.

Instead of useing Ricotta, then use cottage cheese instead. You will find that the lasagna will end up creamier. Also cottage cheese is cheaper.

I would stick w ricotto (no cottage cheese) mixed with herbs, beaten egg or 2, shredded mozzarella & parm.
I've stuffed shells with a combo of spinach souffle and ricotta.
Other alternatives:
Mixture of cheeses - mozzarella, parmesan etc. & a white sauce. (Maybe alfredo might work.)
Tofu
Mascarpone
Here's a different option:
Bacon-Colby Lasagna
2 pounds ground beef
2 medium onions, chopped
2 pounds sliced bacon, cooked and crumbled
2 cans (15 ounces each) tomato sauce
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 tablespoons sugar
1 teaspoon salt
24 lasagna noodles, cooked and drained
8 cups (32 ounces) shredded Colby cheese
In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink; drain. Stir in the bacon, tomato sauce, tomatoes, sugar and salt; cook until heated through.
Spread 1 cup meat sauce in each of two greased 13-in. x 9-in. x 2-in. baking dishes. Layer four noodles, 1-2/3 cups meat sauce, 1-1/3 cups cheese in each dish. Repeat layers twice.
Cover and bake at 350° for 40 minutes. Uncover; bake 5-10 minutes longer or until bubbly. Let stand for 15 minutes before cutting. Yield: 2 casseroles (12 servings each), 24 servings.
