I have a recipe from Better Home and Gardens Encyclopedia of Cooking that's called Speedy Cheesecake Pie? Here's the recipe:1 cup graham cracker crumbs, 3 Tbls butter melted, 1 8-ounce package of cream cheese softened, 1/2 c sugar, 1 Tbls lemon juice, 1/2 teas. vanilla, 2 eggs, 1 c dairy sour cream, 2Tbls sugar, 1/2 teas vanilla. Combine crumbs and butter. Press into buttered 8-inch pie plate, building up sides. Meanwhile, beat cream cheese till fluffy, blend in 1/2 c sugar, lemon juice, 1/2 teaspoon vanilla and dash of salt. Add eggs one at a time, beating well after each. Pour into crust. Bake at 325 for 30 minutes. Combine dairy sour cream, sugar, and vanilla; spoon over top of pie. Bake 10 minutes more. Cool. Chill several hours. Serve with fresh or frozen fruit, if desired.
