I have won several awards with my current recipe. I smoke the meat, make my own chili powders, and among the key ingredients are tequila, beer, cinnamon, chocolate and 6 different chili powders. The first cook-off of the year is Saturday, and I'm in the process of making a batch. What I need to know is does anyone think replacing some of the water with coffee would add an interesting flavor? If not what other liquid? Don't need whole recipes, please, just advice on an ingredient.

I think the coffee would definitely be worth trying - Sounds good to me. With the cinnamon & chocolate you use, maybe a dash of nutmeg or brown sugar would add a little uniqueness to the dish. Let us know how it goes @ the cook-off & good luck!!

I make a good Chili but i have never come accross a competition that awards prizes for it, its a bit like a mole but here goes 2 x onions diced 1 habanero chili deseeded and chopped finely 2 x Jalepeno Chilis chooped finely 1 dried ancho chili ground on pestle and mortar teaspoon cumin seed tespoon coriander seed 1 bit of cinamon bark pimento seeds bout 3 1/2 star anise Peanuts ground up in pestle and mortar Sesame seeds as above black pepper garlic 3 cloves salt Lean beef mince Celery Carrots Diced red pepper Pinto Beans (if tinned keep the tin juice) tinned tomatos x 2 tomaoto puree Chicken stock about 1 cup Coffee strong about 1/4 cup - NOT INSTANT 70% cocoa solids about 100g Mix the spices and nuts together in the pestle and mortar, brown the mince and then set aside sweat the onions celery and carrots with the fresh chopped chillies (mind your eyes) add the spices and cook together for a few minutes add the red pepper and beef to the spicy ontions and allow to cook together for a bit add your beans and the tine jusoce as soon as the meat is nicely cooked through and infused with spices. Add the tomatoes and stir beofre adding the puree and chicken stock, i like to add extra chillis at this point to infuse with the liquor, it gives an even heat this way. some harrisa paste will also work! Allow to cook like this unitl thick and delicious smelling, about 20 mins before cooking add the coffee and about 10 mins before add the chocolate by grating into the hot mixture and stir in well. It sounds mental but please dont knock it until you have tried it! serve with rice, guacamole, pickled jalepenos, sour cream and salsa, of and a handfull of chips too, and you could even grate a bit of mature cheese over the top to complement the whole thing. enjoy

You already have cinnamon. Must be great.

How about beer.

My Great Grandmother used to make an all meat stew with beer as the medium. The alcohol cooks off of course but it sure tastes good.

Sounds like you've got a good thing going, I'm not sure I'd change a thing. Coffee in chili doens't sound that good to me. What about red wine or beef stock?

If it's award-winning, it probably doesn't need improvement!

If you want to bring out the heat of your chili, add some vinegar to the pot.

Why would you want to change anything about it if you've won awards with it? I would keep it just the same.

I have used steak sauce and worstechere ( I messed up that word )
sauce. These will spice it up.
