You don't have to make something new....just make that same thing in a different way.....and a spin on the old....like instead of regular hamburgers....make swiss mushroom burgers, or bbq burgers...
One of my favorites is:
For 4 people-
Peal about 5-6 potatoes and cut into 1-2 inch chunks....also cut up an onion into about 1n square pieces.....have a bag of baby carrots...
You will also need 4-5 pork chops(more if you want leftovers) and a couple of beers....I use Miller Light to cook with...
Take some tin foil and make two large pouches....make sure to fold edges several times to keep liquid from leaking out....put about half of the potatoes, 1/2 the carrote, and 1/2 the onion in each pouch....place 2-3 pork chops on top of that....pour about 1/2 to 3/4 of a beer into each pouch and fold the top....place in the oven at 350 degrees and cook until the meat is done and the potatoes are soft....then serve....you can also use the grill....
Be sure to check the bags often, you don't want the liquid to dry out...if it starts to get low...add more beer.....just never let it get dry......Very good...

Spaghetti? ( okay, it's Italian, but easy!)
Chili & Cornbread
Rice & Chicken w/ any flavor sauce or gravy
Stovetop stuffing has a great recipe, where you put chicken breasts in a baking dish, cover with cream of mushroom soup and sourcream (mixed together), and then top the whole thing with stovetop that you've already mixed with water. Bake the whole thing, my family loves it. The recipe is on the box of stovetop!
Homemade pizza - cut all the toppings and let everyone make their own
Roast & potatos?
Grilled sandwhiches, with a panini grill (or not, just use a regular fry pan). I make grilled bagel sandwhiches with ham and cheese, and then grill like a grilled cheese.
Salmon & Asperagus w/ roasted red potatos
Clam chowder in a sour dough bowl
Thats all I can think of!
Good luck
