Set up a system where the available servers and buspersons all gather around, noisely, with a lot of joy and emotion, lots of animation and bouncing around.

Make it last seveal seconds (as more staff is encouraged to gather. Make sure there is a LOT of energy.

Then, make the table's assigned server shout, "And ONE, and TWO and,"

Everyone abruptly stops and shouts the first line of the song, "Happy Birthday to You." then turns around and leaves.

Short, sweet, no copyright issues and the shock value will be interesting to observe.

One thing that they can't sing is "Happy Birthday" since it is copyrighted and can't be used for commercial purposes without paying a royality. Most restaurants have a song that they sing for birthdays. Just check with the restaurant.
