I have made sausage for many years and for the first time they exploded when i cooked them. any reasons why this might happen...

They explode because the internal pressure builds up without release.

Perhaps you forgot to prick them to release steam, or this batch had a stronger or different skin.

Maybe they got too hot too quick and could not release steam another way.

Maybe this batch had more moisture internally, either as water or as fat. Perhaps there was a pocket of something that was not well-mixed.

the pressure from the stream inside could cause them to explode, i always stick my sausages with a fork or knife once or twice to help the steam to escape. THis also gets some of the grease out of the food.

Possibly a little to much heat or a little to long.

I don't like to pierce the casing itself but I do usually pierce a small hole in each end so the steam and excess grease can escape.

You may need to cook longer at a lower temp...

The rule is...never never pierce a sausauge...it lets the juices out...
