pumpkin cookies with a caramel frosting

INGREDIENTS
2 cups shortening
2 cups white sugar
2 cups canned pumpkin
2 eggs
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
4 cups all-purpose flour
6 tablespoons butter
8 tablespoons milk
2 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
1 cup packed brown sugar
DIRECTIONS
Cream shortening, white sugar and pumpkin. Add eggs and mix well. Sift together the baking soda, ground cinnamon, salt and flour. Add to pumpkin mixture and mix well.
Drop from spoon to cookie sheet. Bake 10 minutes at 350 degrees F (175 degrees C).
To Make Frosting: Cook butter, milk, and brown sugar until dissolved. Cool and add confectioners' sugar and vanilla. Spread over warm cookies.

"These soft and chewy cinnamon scented cookies are make with butter, oats, brown and white sugar, raisins and pumpkin puree."

INGREDIENTS:
8 ounces butter, softened
1 cup white sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup pumpkin puree 1 cup rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup raisins
2 1/2 cups all-purpose flour

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Cream together butter, white sugar and brown sugar until fluffy. Beat in egg, vanilla and pumpkin.

3. In a separate bowl, mix together the oats, baking powder, cinnamon, salt, raisins and flour. Stir into pumpkin mixture.

4. Drop cookies by the heaping teaspoonful on to cookie sheets covered with parchment paper. Bake 12 to 15 minutes or until slightly browned around edges.

5. Remove from oven and place on cooling racks. Frost with your favorite powdered sugar glaze or leave plain.

Pumpkin Cookies

2 cups granulated sugar
2 cups vegetable shortening
1 (15-ounce) can LIBBY'S® 100% Pure Pumpkin
2 large eggs
4 teaspoons vanilla extract
4 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground allspice
2 cups raisins
1 cup nuts, chopped
2/3 cup butter
4 teaspoons rum flavoring
4 cups sifted powdered sugar
4 tablespoons NESTLÉ® CARNATION® Evaporated Milk

Preheat oven to 350°F.

In a large bowl, beat sugar and shortening with an electric mixer on medium speed for 30 seconds. Add pumpkin, eggs and 2 teaspoons vanilla. Stir in until completely blended. Sift together flour, baking powder, cinnamon, baking soda, salt and allspice.

Stir into creamed mixture on low speed. Stir in raisins and nuts.

Drop by rounded teaspoons onto baking sheets and bake for 12 to 15 minutes or until golden brown around the edges. Cool slightly before transferring to wire racks.

While cookies cool, prepare frosting. Cream butter, rum extract and remaining 2 teaspoons vanilla in a medium bowl. Add powdered sugar and evaporated milk. Beat until smooth; frosting will be thin. Frost cooled cookies as desired.

Makes 60 cookies.

Soft Pumpkin Cookies

½ cup softened butter
1 ½ cup sugar
1 cup pumpkin
1 egg
1 tsp vanilla
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
2 ½ cup flour
1 tsp baking soda

Directions
Cream butter and sugar in large mixing bowl. Add egg and vanilla. Beat until fluffy. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in a separate bowl. Add to butter mixture alternately with the pumpkin beating after each addition. Drop rounded tsp on lightly greased cookie sheet. Smooth tops. Bake at 350 degrees for 15 to 20 minutes or until lightly browned. Cool.


Top with Cream cheese frosting:
3 ounces Cream cheese
½ cup butter
1 tsp vanilla
2 cups powdered sugar
Combine frosting ingredients in a small mixing bowl. Beat until light and fluffy. Put this on tope of these cookies and you will be in heaven. I promise you that. !

1 cup shortning
2 cups sugar

1 1/2 tsp. pumpkin pie spice
6 drops of easc red & yellow food coloring

Mix all together & bake at 350* for 14 Min.
You can also put in Raisens& nut, if you want.

Yes. throw out the pumpkin, make some sugar cookies and frost them to look like pumpkins. Pumpkin cookies taste horrible!
