My fiance and I have been having a hard time. We've been forced to go to different universities because we couldn't find 1 that did the courses we both want to do.

Anyway, he's coming to stay with me for a few days next week and I want to cook something really special but I don't know what.

The fact that Im a student means that I have a tiny budget too.

Any help would be great.

A good, easy and inexpensive chicken recipe!

In a microwave safe covered dish place 1 1/2 cups of rice, 3 cups of water and 2 tablespoons of butter. Place in microwave on high for 15 minutes.., Take out stir with a fork and place back in the microwave on high for 2 more minutes....

In a zip lock bag place spices ...garlic power, rosemary, a little Italian seasoning, paprika, salt and pepper. Put the wings in the bag and shake.

Preheat the oven to 350. In a ceramic baking dish lay the rice then place the chicken legs on top of the rice...Cover all the rice with the chicken... Place in oven and cook until the internal temp reads 180.

Open a can of baby peas and a can of sliced mushrooms.. Drain and heat in a saucepan with a little butter...

When the chicken is done... Place the chicken on a platter.... Add the peas/mushrooms to the rice (which now has a wonderful chicken flavor) and stir until evenly mixed.. Place rice/pea/mushroom mixture in a bowl and serve.

Well, if you're like me, you want something simple. I can always find a roast on sale somewhere. If you have a day-of-fun planned, just pop this in before you go and dinner will be ready when you get home!

MOM’S CROCK POT ROAST
2 cans Cream of Onion Soup
2 packages of Brown Gravy Mix (only use 1 ½ packages)
1 ¼ cups Water
Pot Roast
Potatoes (peel and quarter)
Carrots (i like the baby carrots - already peeled)
Salt & Pepper

Put everything in crock pot and cook on low for 8 or 9 hours (or on high for 3 or 4 hours). Serve with warm rolls or bread & enjoy!

Penne with vodka sauce is easy and pretty cheap too! You can even make it easier on yourself and get an already made jar, I highly recommend the Trader Joe's brand! You can also add some sauteed chicken pieces for a little something extra. Salad and some Italian bread complete the meal. Dessert can be a simple as brownies with vanilla ice-cream on top. Hope this helps!

What you cook isn't important , that is well cooked and nicely presented is more important..your engaged at the moment so will be married in the future base your relationship from the beginning on total honesty make him what you usually eat...like has been suggest spag bol is a good low budget meal I don't know anyone who doesn't enjoy it..mostly tho just enjoy you time to gether don't try to impress with cordon bleu cookery just be yourself and enjoy his company..have fun.

"Ground Beef Casserole"

1 1/2 lbs. ground beef
1 shredded onion
1 (10 oz.) pkg. frozen veggies
2 cans cream of chicken soup
1 lb. frozen Tater Tots

Place in casserole dish in above order. Bake at 325* - 1 1/2 hours, uncovered.


"Italian Sausage and Peppers" - Serves 6

2 lbs. Italian sausage
3 large green peppers
2 large onions
salt and pepper
olive oil

Brown sausage well in 2 tablespoons olive oil. When almost cooked (about 20 minutes), wash peppers, peel onions; take inside peppers out. Cut peppers and onions up medium to large pieces. Put on top of sausage; add salt and pepper; lower heat. Simmer until onions and peppers are done, about 1/2 hour.


"Fettuccini Alfredo" - 4 servings

1/2 of a 1-pound pkg. Creamette Fettuccini, uncooked
1/3 cup softened butter
3/4 cup whipping cream; room temperature
3/4 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon white pepper
Dash ground nutmeg (optional)
Coarse ground pepper (optional)
Grated Parmesan cheese (optional)

In Dutch oven or large pot, prepare Creamettes Fettuccini according to package directions; drain. Remove pan from heat. In same pan, combine hot fettuccini and butter; toss to coat. Add one-half the cream; toss well. Add one-half the Parmesan cheese; toss well. Add remaining cream; toss well to coat. Add remaining Parmesan cheese, salt, pepper and nutmeg; toss well until coated and creamy. Arrange in warm serving dish. Serve immediately with pepper and Parmesan cheese. Refrigerate leftovers.
(Serve alongside Kielbasa sausage, hamburger patties, meat loaf, Salisbury steak... )

Cook nothing, but cover your body with fresh luscious fruit and berries, a little Gran marnier (or alco pop if your on a budget) A tin of spray cream should just about top off the meal of his life. Have fun!

Taco Bake:
1 Kraft Macaroni the kind with the creamy cheese
1 lb of beef
1 8oz carton Sour Cream
1 Can of Campbell's nacho cheese
1 pack of Taco seasoning
1 jar of salsa mild , medium , hot what ever your taste desires
1 pack of Mexican shredded cheese
fix Macaroni like directions calls for
brown beef and add taco seasoning follow directions on seasoning packet.
spray a casserole dish with cooking spray
mix sour cream, and Campbell's nacho soup together add to Macaroni.
spread Macaroni in dish then layer with beef mixture, spread salsa on top of beef mixture, add shredded cheese and bake for 30 minutes on 350 degrees.

How about spaghetti with homemade sauce (make the sauce the day before he gets there), garlic bread, and a simple green salad?

You don't want to be slaving all day in the kitchen when you want to be spending those precious few days together.

And make it special by candles and such. Enjoy, and have fun!

Cook anything! If he's coming to stay for a few days he aint gonna be bothered what you two eat, as long as it's with you.

But if you want a proper suggestion, stew and dumplings, made with yummy guiness :) it's my favourite and my fiancee's too. Homemade dumplings are the best, it's homely and it's yummy and it's cheap.

SAFFRON ORZO WITH ASPARAGUS AND PROSCIUTO
Yield: 6 servings

4 Tablespoons butter (1 /2 stick)
2 ounces thinly sliced prosciuto, cut into thin strips
1 1 /4 Cups Orzo (about 8 ounces)
3 Cups low-salt chicken broth
1 /2 teaspoon (loosely packed) saffron threads, crushed
1 pound slender asparagus, trimmed, cut into 1 /2" pieces
1 /4 Cup grated Parmesan Cheese
Parmesan Cheese Shavings, Optional

1. Melt 2 Tablespoons butter in a large, non-stick skillet over medium-high heat. Add prosciuto and saute until almost crisp, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.

2. Melt 2 Tablespoons in the same skillet over high heat. Add Orzo; stir 1 minute. Add broth and saffron; bring to a boil. Reduce heat to medium-low, cover, and simmer until orzo begins to soften, stirring occasionally, about 8 minutes. Add asparagus; cover and simmer until tender, about 5 minutes. Uncover and simmer until almost all of the liquid is absorbed, about 1 minute. Remove from heat.

3. Mix in prosciuto and 1 /4 cup of the grated cheese. Season to taste with salt and pepper. Transfer to a large bowl. Garnish with the Parmesan shavings.
