You can use buttermilk or milk if you want, or even just plain water. Hint. First coat the food with flour, then the liquid and then the final breading, this first coat of flour will help the other breading adhere to the food and wont all come off when frying. It also helps make a crisper breading.

Actually, a batter without eggs usually results in less greasy foods since the fat in the yolk attract the fats in the fryer.

Coat moist foods with flour or cornstarch (cornstarch is often a better choice), and knock off as much of the coating as you can.

Dip the food in a thin batter of 2 cups of all-purpose flour, a tablespoon of baking powder, a teaspoon of salt- and a little of other flavorings based on what you are frying. Avoid seasonings that would burn in the heat, like pepper.

You need to add some liquid, and you'll want to match the liquid to the food. For fish, for example, you can use a bottle of cold beer for flavor. Club soda, milk, butter milk, even plain water would work. The amount of liquid will control how thin the batter is. Most batters do best if they are pancake-batter like.

Just so someone will have said it... egg beaters are made out of eggs. If a person is allergic to whole eggs then they are also allergic to egg beaters.

The best egg-less way to coat before frying is to use buttermilk and flour or breadcrumbs. It works and brings a lot of flavor to the party.

Milk or Buttermilk will work. Just an FYI for ya Eggbeaters although a subsitute is still made from real eggs....it says so right on the container so be careful with that.

You do not need egg wash to fry ,I fry chicken by just seasoning it and rolling it in flour and fish the same season and roll in yellow corn meal and never use egg wash.

Buttermilk would work. You could use a batter instead of bread crumbs. In japanese cooking they will often just coat things in heavily seasoned cornstarch, and that turns out great. It's great on chicken. Best "chicken nuggets" you'll ever have!

I have many times just wet the meat to be coated and roll in flour. This provides a pretty goodcoating - you just have to be more careful when turning and removing from the pan.
